Blueberry Toast
Blueberry toast is sweet, crunchy, and a delicious healthy snack! Nutritionally balanced and easy to whip up, it’s a go-to filling snack that the whole family loves!
Why This Blueberry Toast is So Good
This blueberry toast is so good for so many reasons – it’s got it all!
- It’s delicious! And so satisfying with the different textures and flavors!
- It’s SO simple. Seriously – just toast and a handful of no-prep toppings!
- It’s fast – less than five minutes and this balanced, healthy snack is ready for you to chow do
- It’s family-friendly! Okay, sometimes I do feel a bit silly saying “family-friendly” because anyone who’s been around kids knows every kid has their preferences! But if your kids like toast, yogurt, and blueberries – y’all are set!
- It’s nutritionally balanced and makes for a solid, filling snack, or even part of a meal.
Key Ingredients
To make blueberry toast, there are a couple obvious ingredients – toast and blueberries, of course! But I’ve added a few more ingredients to amp up both the nutrition and the flavor to make this a more satisfying snack or meal component all around!
- Bread for toast – you can use any kind of bread you prefer or have on hand. I love a bread made 100% of whole grains – I personally love the taste, and nutritionally it adds more fiber and protein. I used Dave’s Killer Bread, the thin-sliced yellow Good Seed bread in this recipe, so that’s what you’ll see reflected in the nutrition information, as well!
- Blueberries – I mean, kind of a given here! I used and love fresh blueberries, but thawed frozen blueberries absolutely work as well (the texture is just a little different).
- Greek Yogurt – this lends creaminess and packs a protein punch, too. I used plain, nonfat Greek yogurt, but you of course can use whatever type of Greek yogurt you prefer (I also love the Oikos Triple Zero Greek yogurts sweetened with stevia, and Siggi’s Icelandic-style yogurts, too).
- Hemp Hearts – hulled hemp hearts add more protein and healthy fats (and nope, they don’t contain CBD or THC).
- Lemon Zest – okay, this ingredient is a little extra and totally optional if you don’t have it, BUT if you have it, the lemon zest adds amazing flavor and pairs beautifully with the blueberries!
- Honey – again, optional, but if you or your fam like things a little sweeter, you may enjoy a drizzle of honey on top.
Kitchen Tools & Equipment Needed
This is a pretty basic recipe, so all you need is a toaster (or air fryer – yes you can make toast in the air fryer, it’s actually my new favorite method! Grab the simple tutorial here!) and some measuring cups/ spoons.
How to Make it
- Toast your bread to your preferred level (I do recommend making sure the toast is crunchy/ sturdy enough to hold up to the toppings).
- Top toast with an even layer of Greek yogurt, then add blueberries and lightly press the berries into the yogurt.
- Sprinkle hemp hearts and lemon zest on top, then finish off with a little drizzle of honey should you desire!
What to Eat With it
So, my thoughts as a dietitian: you do you! For the amount of energy (calories) this has, I would consider this more of a snack than a meal. But even as a snack, you may find you need more energy – and that’s okay!
You can always double up and make another slice, or you can pair your blueberry toast with something else, like:
- Hard boiled eggs (SO easy in an Instant Pot!)
- Avocado Deviled Eggs
