Happy Valentine's Day! I was reflecting on past Va

Happy Valentine's Day! I was reflecting on past Valentine's Days this morning and wanted to encourage everyone to show some extra love and kindness to all. We've been on the giving and receiving ends of extra kindness, and honestly they both stand out as some of the most memorable Valentine's we've had.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Our first Valentine's Day dating in college we organized a homeless outreach with 50 volunteers, distributing toiletries, handmade Valentine's, non-perishable snacks, water bottles, and hot sandwiches to hundreds finding themselves without a home that day. And honestly, I don't think we've ever been able to top how awesome that Valentine's was!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Last year was totally different. We were living out of a Ronald McDonald House, with my 6 day old baby upstairs, having just been transferred back to the more critical side of the NICU the day before after another unexplained event where he had infantile seizure-like activity (but no actual seizures) and stopped breathing, turned blue, and needed help to start breathing again. All of which was made harder by the fact we had been looking at discharging in the next 24 hours because he hadn't had any events since he was a day old, he passed beyond extensive testing and all the experts just said he seemed perfectly healthy and didn't know what was wrong. It was the worst. Worse yet, my two-year-old daughter wasn't with us and I had barely seen her the past week.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
But what stands out from that day was the love, kindness, and support we were shown. The way my mom and her friends made sure my daughter had a fun Valentine's Day and kept her happy and distracted. Gifts we were given for our daughter. The dinner my mom made as we escaped the NICU for a few hours to spend time with our daughter and my parents. And I still have the sweet blanket that a group came by and gave one to every baby in the NICU that Valentine's Day.

The best thing about kindness is it does so much for the giver and the recipient. Share some love today! xo!

These chocolate avocado truffles have long been on

These chocolate avocado truffles have long been one of the top recipes on my blog. They have a naturally fudgy texture from the avocados, and are lower in sugar from the use of dark chocolate (use @lilys_sweets for no added sugar!). Plus that yummy avocado means these truffles have more healthy fats and fiber than traditional truffles.

And as long as your entire kitchen isn't packed in moving boxes like mine is at the moment, you can totally whip these up now for Valentine's Day tomorrow!

Blood orange rosemary salmon en papillote.😍😍 If you're wondering what the heck "en papillote" means, it's nothing fancy - it just means "in paper."

Lay out some parchment paper and on one side place some asparagus stalks, top with a beautiful piece of salmon, season with salt, pepper, and olive oil, then top with slices of blood oranges and rosemary. Then you fold the parchment paper around the fish and fold the edges to create a paper pouch that steams the fish and veggies in the oven.

It looks and sounds really impressive, but it's actually really simple!

P.S. If you can't find blood oranges, just use any other type of orange or even lemons or meyer lemons instead.

These raspberry caramel chocolate cups are one of my absolute favorite Valentine's treats - and you would NEVER guess they can be made with NO ADDED SUGAR! They're entirely fruit-sweetened!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Just blend raspberries (I used @red_raspberries #FrozenRaspberries) and dates for the filling (the dates add sweetness and notes of caramel flavor) and use your preferred chocolate of choice (keep them no added sugar with @lilys_sweets stevia-sweetened chocolate or you can even use a 100% cacao, unsweetened chocolate like from @paschachocolate).

They require a little bit of time for assembly and to set, but they can easily be made ahead. So make them now and they'll be ready to go for a sweet Valentine's Day treat on Friday after a long week at work.

My baby boy turned one yesterday and we're moving

My baby boy turned one yesterday and we're moving from Florida to Tennessee over the next couple of weeks (so life isn't busy at all!😉), but I procrastibaked enough that I finally perfected these avocado brownies, just in time for Valentine's Day! And dang y'all, they are THE BEST. Ultra-delicious and decadent dark chocolate, fudgy, ganache-topped - they are SO good!

They also happen to be gluten-free, nut-free, dairy-free, egg-free, and totally vegan and plant-based, so these are stellar if you or your loved ones need to eat a certain way for your health or allergies (no judgement - I have to, too!)
