These biscoff truffles are like a chocolate cookie truffle, but with all the cozy, warm, cinnamon vibes, covered in white chocolate. They’re a simple, holiday no-bake treat that are always a hit!

  • Biscoff Cookies – you’ll need one 8.8 ounce sleeve of Biscoff cookies. All but one will be used in the truffles — the reserved one gets crumbled and used to garnish the truffles.
  • Cream Cheese – you need a block of room temperature cream cheese, or Neufchatel cheese for a lower fat option.
  • White Chocolate – white chocolate chips (or a chopped white chocolate baking bar) is melted down to dip the truffles into.
  • Coconut Oil – while not absolutely necessary, a little coconut oil is incredibly helpful with thinning the white chocolate to a more dipping-friendly consistency. I promise it doesn’t make it taste like coconut, either!

Place all but one of the biscoff cookies into a food processor and process 1-2 minutes until an even, crumbly texture. Add the cream cheese and process until a smooth “dough” forms.

Scoop the dough and roll into smooth balls. Dip into melted white chocolate, top with a little crumbled cookie, and set and store in the refrigerator.

Tips and Variations

  • Use a cookie scoop to get uniform truffle sizes, but then roll them between your palms to get them nice and smooth.
  • Use a fork to remove the dipped truffle from the white chocolate, and tap the wrist of the hand holding the fork to gently shake excess chocolate off.
  • Add cookie crumble garnish while the white chocolate is still wet!
  • Switch up the garnish – add a sprinkle of sanding sugar, a drizzle of cookie butter melted with white chocolate, or sprinkles on theme with a holiday or other event.

How to Store Biscoff Truffles

Store cookie truffles in an airtight container in the fridge for up to one week. They can also be frozen for up to one month.

Biscoff Truffles

Ingredients

  • 8.8 ounces Biscoff cookies
  • 5 tablespoons neufchatel cheese
  • 8 ounces white chocolate
  • 2 teaspoons coconut oil

Instructions

  • Place all but one of the Biscoff cookies into a food processor and pulse on high until you have a fine crumb. Add Neufchatel cream cheese and pulse until there's a smooth, evenly combined dough.
  • Use a tablespoon to scoop balls of truffle dough, then roll in-between clean hands. Place on a parchment paper covered plate and let chill in the fridge while you melt the chocolate.
  • Add white chocolate chips and coconut oil to a small, microwave-safe bowl. Melt in 30 second intervals, stirring in between each round until all the chocolate chips have melted.
  • Dip each truffle into the melted chocolate, one at a time. Remove it from the melted chocolate with a fork, and gently tap your wrist with your other hand to help shake off the excess chocolate. Transfer back to the parchment paper covered plate. Crumble the remaining cookie, and sprinkle a few Biscoff cookie crumbs on top of the truffle before the white chocolate has hardened. Repeat until all truffles are dipped.
  • Refrigerate for 20 minutes, or until set. Transfer to an airtight container and store in the refrigerator for up to 5 days. Enjoy!
