How to Make Buffalo Chicken Dip with Cottage Cheese

Add the cottage cheese, hot sauce, and seasonings to a blender and blend until smooth. If you’re using a lesser amount of hot sauce, you may need to add a tablespoon or two of water to help the sauce blend smoothly.
Add the chicken and sauce to a slow cooker, cook, and then shred the chicken and toss in the sauce once done.
Tips and Variations
- Extra cheesy – add 1/4 to 1/2 cup shredded cheddar cheese when you’re stirring the shredded chicken back into the sauce. This makes it even creamier and cheesier.
- Ranch style – add a tablespoon of ranch seasoning to the sauce, or top with a drizzle of ranch dressing when done.
- Different chicken cuts – you can also use chicken thighs here, too, if you prefer.
- Important note: immediately after cooking in the slow cooker, the sauce will look a little odd and separated. Once you shred the chicken and stir everything back together, it all reincorporates. But due to the lower fat nature of this recipe, you may experience some separation the longer it sits. Just give it a stir and you’re good to go!
Meal Prep: Storing & Reheating
Love adding this super light and high protein buffalo chicken dip to my meal prep lunch and snack rotations! I’ll either portion it into individual containers that I can reheat when the time comes, or store in one airtight container to just portion out what I need in the moment.
This buffalo chicken dip will last up to 3-4 days in the fridge in an airtight container.
Reheat in the microwave at 30 second intervals until warmed through, or in a small pot on the stove top. Note that especially on the stove top, you may need to add an additional splash or two of liquid to account for moisture lost during the reheating process.

Buffalo Chicken Dip with Cottage Cheese
Ingredients
- ½ cup low fat cottage cheese
- 1/4-1/2 cup hot sauce
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- 1 pound chicken breasts boneless, skinless
Instructions
- To a blender, add cottage cheese, hot sauce, and seasonings and blend until smooth. Note that If you like your buffalo sauce with more kick, use 1/2 cup hot sauce, but if you like yours a little more mild, use 1/4 cup. If you're using 1/4 cup, you may need to add 1-2 tablespoons of water to get the sauce mixture blending.1/2 cup low fat cottage cheese, 1/4-1/2 cup hot sauce, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon smoked paprika
- To a slow cooker, add the chicken and the blended sauce. Make sure the chicken is entirely coated in the sauce, then cover and cook on high for 3-4 hours or low for 5-6 hours, or until chicken reaches 165° internally.1 pound chicken breasts
- Shred chicken, then stir back in with the sauce. Note that the sauce may have separated slightly, and that's okay, just stir it back together!
- Serve immediately with tortilla chips, pita chips, veggies, on a wrap, etc. Enjoy!
