Caprese Salad Dip

This caprese salad dip has tiny pieces of fresh tomatoes, mozzarella and basil tossed in extra virgin olive oil and balsamic vinegar for a simple, yet extremely flavorful dip. It’s like if caprese salad and bruschetta had a baby, it’d be this dip. You’ll be going back for more and more!

  • Tomatoes – use whatever fresh tomatoes you have available. I’ve used heirloom tomatoes, roma tomatoes, cherry tomatoes, and grape tomatoes. Just be sure to strain or blot out any excess juices.
  • Fresh Mozzarella – you’ll want to dice it into tiny pieces to spread out the cheesy goodness throughout every bite.
  • Fresh Basil – you really want to use fresh basil here, because with such few ingredients, you really want the max flavor and quality with each ingredient.
  • Extra Virgin Olive Oil – adds delicious flavorful and helps bring all the ingredients together.
  • Balsamic Vinegar – adds a splash of brightness and rounds out the flavor profile.
  • Seasonings – I normally use garlic powder, but you could use grated fresh garlic, or garlic toast to dip, too. Plus, don’t forget salt and pepper!

Finely dice tomatoes and mozzarella, then gently toss with minced fresh basil, olive oil, balsamic, and seasonings.

Tips and Variations

  • I highly recommend using a strainer or even a clean towel or paper towel to strain and/ or blot excess tomato juice from the diced tomatoes (especially if you’re using a super juicy tomato variety!).
  • With such few ingredients used, try to use the best quality and most flavorful ingredients you can.
  • For a lemony twist, skip the balsamic vinegar and add the juice of half a lemon.
  • For a little heat, add some crushed red pepper flakes.

Caprese Dip Storage

Head’s up that due to the fresh nature of all the ingredients, this dip is best served fresh. Whenever we have had leftovers, we keep them no more than a day in an airtight container in the fridge and usually use it to top grilled chicken or fish.

Ingredients

  • 1 pound tomatoes diced
  • 4 ounces fresh mozzarella diced
  • ½ cup fresh basil diced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • pinch black pepper
  • dippers of choice crostini, pita chips, etc.

Instructions

  • Finely dice tomatoes, mozzarella, and basil. Use a strainer and/ or a clean towel or paper towel to strain and blot excess moisture out of the tomatoes.
    1 pound tomatoes, 4 ounces fresh mozzarella, 1/2 cup fresh basil
  • Add the tomatoes, mozzarella, basil, oil, balsamic, and seasonings to a medium-sized bowl, then gently toss to combine. Adjust seasonings to taste.
