While I’m typically a sweet snack fan, sometimes you need a salty, savory snack. These seasoned pizza crackers are for exactly those moments!

  • Crackers – I used Simple Mills almond flour crackers in this recipe, but you can substitute a cracker of your choice.
  • Olive Oil – Extra virgin olive oil is the base for our seasonings. It also adds a little flavor, and maintains its health benefits, as the crackers are baked at a low temperature, beneath its smoke point.
  • Tomato Paste – tomato paste is the best way to add a concentrated tomato flavor in a small amount, and without adding too much extra moisture like with adding tomatoes or tomato sauce.
  • Oregano and Garlic Powder – adds flavor for more pizza seasoned vibes!
  • Parmesan Cheese – parmesan cheese is the perfect addition to these crackers, as it adds flavor, a little saltiness, and crisps up beautifully in the oven, maintaining a crisp cracker.

Whisk together olive oil, tomato paste, and seasonings. Gently toss the crackers in the tomato seasoned oil.

Add grated parmesan and gently toss again. Spread out on a parchment paper-lined baking sheet without overlapping, then bake!

Tips and Variations

  • Sundried Tomato Oil – instead of using olive oil and tomato paste, use the oil from a jar of sundried tomatoes. You can also finely mince a tablespoon of the sundried tomatoes themselves for an extra burst of flavor.
  • Gluten-Free – using the Simple Mills almond flour crackers makes these naturally gluten-free!
  • Nut-Free – substitute your favorite nut-free cracker, even like a Ritz cracker or oyster cracker.
  • Dairy-Free – use your favorite dairy-free parmesan substitute, a couple tablespoons of nutritional yeast, or omit entirely.
  • Extra Cheesy – if you’re a big cheese pizza fan, double the amount of parmesan cheese. Or, melt a sprinkle of mozzarella cheese over the crackers immediately before eating (note that if you have any leftover, they must be stored in the fridge and the crackers will lose a little of their crispness).

How to Store Seasoned Crackers

Once fully cool, store the pizza seasoned crackers in an airtight container in the pantry for up to a week.

Ingredients

  • 4 ounces almond flour crackers or other cracker
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ¼ cup parmesan cheese grated

Instructions

  • Preheat oven to 250°F. Line a sheet pan with parchment paper and set aside.
  • To a medium or large-sized bowl, add the oil, tomato paste, oregano, and garlic powder and whisk until incorporated (there will be very tiny pieces of tomato paste and it won't be completely homogenous — that's okay!).
    2 tablespoons extra virgin olive oil, 1 tablespoon tomato paste, 1 teaspoon dried oregano, 1 teaspoon garlic powder, 1/4 cup parmesan cheese
  • Add the crackers to the tomato seasoned oil and gently toss until evenly coated. Add parmesan cheese and gently toss again. Spread the crackers out on the prepared sheet pan, without overlapping them.
    4 ounces almond flour crackers, 1/4 cup parmesan cheese
  • Bake the crackers for 15-20 minutes, or until they're slightly browned. Remove from the oven and let them fully cool.
  • Store in an airtight container in the pantry for up to one week. Enjoy!
