Whether you need an easy bake to prep for a few breakfasts, or an egg bake to serve at a holiday brunch, this cottage cheese egg bake is just the ticket!

  • Eggs – one of the costars of this recipe, you need eight large eggs.
  • Cottage Cheese – to add even more protein and some creaminess, you need a full cup of cottage cheese. I usually use 2%/ low-fat cottage cheese, but you can use full, 4% milkfat if you prefer.
  • Shredded Cheese – this adds a little extra creaminess and flavor, as well as a little extra protein, too. I love white cheddar cheese, but you can use whichever cheese you have or enjoy.
  • Spinach – sneak in a serving of your daily veggies by adding two cups of chopped spinach. No need to pre-cook it!
  • Canadian Bacon – I used a lean turkey Canadian bacon, but any Canadian bacon or chopped ham will work. This adds protein and flavor! You can also substitute your favorite turkey sausage, ground meat, or even omit entirely for a vegetarian option.
  • Seasonings – I keep it simple with garlic powder, onion powder, salt, and pepper. You can always add more or change up the seasonings, too, depending on the flavor vibe you’re going for (I’ve also added Italian seasoning, smoked paprika, oregano, cumin, and other spices before, too.)

How to Make a Cottage Cheese Egg Bake

Place all of the eggs, cottage cheese, shredded cheese, and seasonings in a blender and blend until smooth. Add spinach and Canadian bacon to a prepared 8×8 or 9×9-inch pan, them pour the blended eggs over top. Bake for 25-35 minutes, or until set.

Tips and Variations

  • Wondering how to know when your egg bake is done? The center of the eggs will be set/ won’t jiggle if you gently shake the baking dish.
  • Try different mix-ins! I love the spinach and Canadian bacon option, but you can get creative with so many options! Another personal favorite is sauteed diced bell peppers and turkey sausage.
  • Bake in individual meal prep containers. I’ve baked these in my two cup, oven-safe, round glass containers before. It’s easy, because once they’ve cooled some, you just slap a lid on and transfer to the fridge. But note that if your egg mixture is deeper in the container, it will take a little longer for it to fully set — more like 35-40 minutes.
  • Try different cheeses. Pepper jack cheese is a favorite in my house, as well as feta cheese.
  • Change the seasonings. For more southwestern flair, add a pinch of smoked paprika and 1/4 teaspoon dried oregano and cumin. For more of an Italian flair, you can add 1/2 teaspoon Italian seasoning. Have fun with it!

Meal Prep: Storing & Reheating

A cottage cheese egg bake is perfect for meal prep! Simple bake as instructed, then let cool 10-15 minutes upon removing from the oven. Slice into four pieces and transfer to an airtight container. Keep in the refrigerator for up to 3-4 days.

Freezer-Friendly: You can also freeze your egg bake slices! Freeze in a freezer-safe, airtight container for up to 30 days.

To reheat, simple place a portion on a microwave-safe plate or container and microwave for 1-2 minutes, until heated through (times will vary based on individual microwaves).

Also, on a meal prep note, you can bake your egg bake in individual oven-safe containers, too. Just know that if it’s a smaller container (like a two cup round containers I’ve linked below), the mixture will rise higher in the baking dish and it will take longer to bake (35-40 minutes).

Ingredients

  • 8 large eggs
  • 1 cup 2% cottage cheese
  • ½ cup shredded white cheddar cheese
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 cups spinach chopped
  • 1 cup chopped Canadian bacon

Instructions

  • Preheat. Preheat oven to 350°F and spray an 8×8" or 9×9" pan with nonstick cooking spray. Set aside.
  • Blend eggs. To a blender canister, add eggs, cottage cheese, shredded cheese, and seasonings. Blend on high for 1 minute, or until mixture is completely pureed and smooth.
    8 large eggs, 1 cup 2% cottage cheese, 1/2 cup shredded white cheddar cheese, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon salt, 1/4 teaspoon ground black pepper
  • Assemble egg bake. Add chopped spinach and Canadian bacon to the prepared baking dish, then pour the blended eggs on top.
    2 cups spinach, 1 cup chopped Canadian bacon
  • Bake. Bake for 25-35 minutes, or until the center of the egg casserole is set and does not jiggle when you gently jostle the pan.
  • Serve. Let egg bake cool for 5-10 minutes before serving, then serve and enjoy! It can also be sliced and transferred to airtight containers for meal prep, and refrigerated for 3-4 days. Enjoy!
