Reasons You’ll Love This Recipe:
- No flipping required – All four quesadillas go in the oven at once, so everyone’s plate is ready together instead of picking at cold ones while you finish the batch.
- 36 grams of protein – Between the chicken, bacon, and cheese, each serving keeps you full and satisfied.
- 12 grams of fiber – Swapping in low-carb tortillas turns a classic quesadilla into a genuinely balanced meal.
- Endlessly flexible – Use rotisserie chicken, turkey bacon, your favorite cheese, or regular tortillas — this recipe bends to whatever’s already in your kitchen.
- On the table in minutes – It’s a real weeknight option, not a recipe that only works when you have time to fuss over it.
- Kid-approved – Cheesy, familiar, and mild enough that even picky eaters go back for seconds.
- Freezer-friendly – Make a double batch and freeze the extras — reheat straight from frozen in the air fryer or oven and they crisp back up like they’re fresh off the sheet pan.
Ingredient Notes & Substitutions:
For a full ingredient list with quantities, please check out the recipe card at the bottom of this post.
- Tortillas – I use high-fiber, low-carb tortillas to boost the protein and fiber count, but regular flour tortillas work great too if that’s what you prefer.
- Chicken – Shredded cooked chicken keeps this recipe fast; rotisserie chicken is a perfect shortcut here.
- Cheddar cheese – Sharp cheddar brings the best flavor, but feel free to swap in your favorite melty cheese or a Mexican blend.
- Ranch dressing – A yogurt-based ranch keeps things a little lighter without sacrificing flavor, but any ranch dressing you love will work.
- Bacon – Regular bacon or turkey bacon both work well, so use whichever you keep on hand.
- Green onions – These add a fresh, mild bite on top, but you can leave them off if you’re not a fan.
How to Make Chicken Bacon Ranch Quesadillas
For complete instructions, please check out the recipe card at the bottom of this post.
- Prep the pan – Preheat the oven to 400°F. Line a sheet pan with parchment paper, then spray the parchment with oil.
- Mix the filling – Stir together the shredded chicken, ranch, bacon, and green onions in a medium bowl until combined.
- Layer the cheese and filling – Lay the tortillas on the sheet pan. Add 2 tablespoons of cheese to one half of each tortilla, top with the chicken mixture, then add another 2 tablespoons of cheese on top.
- Fold and crisp – Fold the empty half of each tortilla over the filling and press gently to seal. Spray the tops lightly with oil for extra crispiness.
- Bake – Bake for 12-15 minutes, until golden brown.
- Rest and serve – Let cool a couple minutes before slicing. Garnish with extra green onion and serve with ranch for dipping.
Tips and Variations
- Use rotisserie chicken – It’s the easiest shortcut for this recipe and works just as well as chicken you cook yourself.
- Swap the protein – Shredded turkey, leftover grilled chicken, or even ground chicken all work in place of shredded chicken breast.
- Try turkey bacon – A lighter swap that still gives you that smoky, salty bite.
- Change up the cheese – Sharp cheddar is my go-to, but a Mexican blend, pepper jack, or Monterey Jack all melt beautifully here.
- Avoid overfilling – Stick to the amounts listed so the tortillas fold and seal easily — overstuffed quesadillas are harder to close and more likely to leak filling in the oven.
- Freeze for later – Let the quesadillas cool completely, then wrap individually and freeze for up to 1 month.
- Reheat from frozen – Air fry at 375°F for 8-10 minutes, or bake at 375°F for 12-15 minutes, until heated through and crispy again.
Meal Prep & Storage

- Reheat from frozen – Air fry at 375°F for 8-10 minutes, or bake at 375°F for 12-15 minutes, until heated through and crispy again.
- Make-ahead tip – Mix the chicken filling up to 2 days ahead and store it in the fridge, so assembly and baking is all that’s left on busy nights.
- Avoid the microwave – It works in a pinch, but the tortilla turns soft instead of staying crispy.
