  • Chicken – boneless, skinless chicken breast is a great lean option, but you can also use chicken thighs if you prefer.
  • Turkey Bacon – I use turkey bacon for a leaner alternative, but you can also use regular bacon.
  • Potatoes – baby gold potatoes are quartered for bite-sized pieces (that also roast faster).
  • Vegetables – broccoli and green beans are delicious in this recipe, but you can substitute other vegetables you prefer, like bell pepper, zucchini, or mushrooms.
  • Cheese – shredded sharp cheddar cheese is added and then melted on top at the end for a delicious creaminess and flavor burst.
  • Ranch Dressing – you can use a store-bought dressing (I like Bolthouse Greek yogurt-based Ranch) or make your own (add a little extra milk to thin down my cottage cheese ranch dip for a drizzly homemade ranch!)
  • Seasonings – salt, pepper, ranch seasoning, and some fresh chopped parsley or green onion tie all the flavors together!

How to Make a Chicken Bacon Ranch Bowl

To a half sheet pan, add chopped chicken breast, potatoes, turkey bacon, broccoli, green beans, oil, and seasonings. Toss to combine. Roast for 25-30 minutes, or until the potatoes are tender and chicken is cooked through. Remove from the oven and immediately top with shredded cheese and allow it to melt for 2-3 minutes. Prior to serving, top with ranch dressing and fresh herbs, then serve and enjoy!

Tips and Variations

  • Swap different vegetables. Zucchini, bell pepper, onion, mushrooms, and other veggies all taste great in this dish, too.
  • Make it dairy-free. Skip the shredded cheese and use a dairy free ranch seasoning blend and ranch dressing.
  • Try chicken sausage instead of chicken breast.
  • Swap the carb. Try sweet potatoes instead of gold potatoes. You can also skip the roasted potatoes entirely and do more vegetables or serve instead with rice, cauliflower rice, quinoa, farro, or mashed potatoes.

Meal Prep Tips: Storing & Reheating

These chicken bacon ranch bowls are perfect for meal prep! Make the sheet pan ranch chicken as specified in the recipe, including letting the shredded cheese melt over the hot dish once removing from the oven. Then transfer to an airtight container and store for 3-4 days in the fridge.

I don’t recommend freezing, as I find it changes the consistency of the vegetables and potatoes too much.

For the ranch dressing and herb garnish, you can add it to the bowl before refrigerating and reheating, or after. I find it’s delicious both ways — lower maintenance to do it before, but more aesthetic to garnish after reheating, if that matters to you. ; )

  • 2 chicken breasts boneless, skinless, chopped into 1" cubes
  • 4 slices turkey bacon chopped
  • 2 cups baby gold potatoes quartered
  • 2 cups broccoli florets
  • 2 cups green beans cut into 1" pieces
  • 2 tablespoons avocado oil
  • 3 tablespoons ranch seasoning (1 packet)
  • pinch salt and pepper
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup light ranch dressing
  • 2 tablespoons chopped parsley or green onion

Instructions

  • Preheat oven to 400°F.
  • To a sheet pan, add chicken, turkey bacon, potatoes, broccoli, green beans, avocado oil, ranch seasoning, salt, and pepper. Gently toss everything together to combine and spread into an even layer on the sheet pan.
    2 chicken breasts, 4 slices turkey bacon, 2 cups baby gold potatoes, 2 cups broccoli florets, 2 cups green beans, 2 tablespoons avocado oil, 3 tablespoons ranch seasoning, pinch salt and pepper
  • Roast for 25-30 minutes, or until potatoes are tender and chicken is cooked through (it's done when its internal temperature reaches 165°F).
  • Remove the sheet pan from the oven and immediately sprinkle the cheddar cheese evenly over top of the sheet pan ranch chicken, allowing cheese to melt for 2-3 minutes.
    1/2 cup shredded sharp cheddar cheese
  • Drizzle ranch dressing on top and garnish with chopped parsley. Serve immediately and enjoy!
    1/4 cup light ranch dressing, 2 tablespoons chopped parsley
