Reasons You’ll Love This Recipe:
- No lettuce, no soggy leftovers – This chopped salad skips the lettuce entirely, so it stays fresh and crisp in the fridge all week instead of wilting by day two.
- High protein, high fiber – With 34g of protein and 13g of fiber per serving, this one actually keeps you full instead of leaving you hunting for a snack an hour later.
- Built for meal prep – Chop everything, toss with the dressing, and you’ve got grab-and-go lunches ready to go for days.
- Two ways to eat it – Enjoy it as a classic salad, or scoop it up with chips or crackers for a “chip salad” moment that’s basically a party in a bowl.
- Big flavor, minimal effort – The smoky-sweet lime dressing comes together in one bowl, then just toss with the veggies.
Ingredient Notes & Substitutions:
For a full ingredient list with quantities, please check out the recipe card at the bottom of this post.
- Grape tomatoes – Cherry tomatoes work just as well if that’s what you have on hand.
- Corn kernels – Fresh, frozen (thawed), or canned all work here; fire roasted or grilled corn adds a nice smoky touch if you want to take it up a notch.
- Black beans – Pinto beans or a mix of beans works too if you want to change it up.
- Chicken breast – Rotisserie chicken is a great shortcut here, or swap in ground turkey or shredded chicken thighs.
- Bell peppers – Any color works; a mix of red, yellow, and green adds the most color to the salad.
- Red onion – White onion works in a pinch, or leave it out entirely if you’re not a raw onion fan.
- Green onions – These add a milder onion flavor on top of the red onion; feel free to skip if you want a less oniony bite.
- Cilantro – If cilantro tastes like soap to you, fresh parsley is a good stand-in.
- Lime juice – Fresh-squeezed is best for flavor, but bottled works if that’s what’s in the fridge.
- Extra virgin olive oil – Avocado oil is a fine swap if that’s your go-to.
- Honey – Maple syrup works as a substitute, but it will slightly change the flavor.
- Garlic – Fresh is best, but ¼ teaspoon of garlic powder works if you’re out of cloves.
- Chili powder, smoked paprika, and ground cumin – This trio builds the smoky southwestern flavor; a store-bought taco seasoning can work in a pinch, but the fresh spices give the best flavor.
How to Make a Southwest Chopped Salad
For complete instructions, please check out the recipe card at the bottom of this post.
- Whisk the dressing. Add the lime juice, olive oil, honey, garlic, chili powder, smoked paprika, and cumin to the bottom of a large bowl, then whisk it all together.
- Add the salad ingredients. Pile the tomatoes, corn, black beans, chicken, bell peppers, red onion, green onions, and cilantro right on top of the dressing.
- Toss to combine. Use a spatula to toss everything together, making sure to scrape up all that dressing from the bottom of the bowl so every bite gets coated.
- Serve and store. Enjoy right away, or transfer to airtight containers and keep in the fridge for up to 3-4 days. Enjoy!
Tips and Variations
- Naturally gluten-free – No modifications needed; this salad is gluten-free as written.
- Naturally dairy-free – This recipe is dairy-free from the start, so no swaps required there either.
- Make it vegetarian – Skip the chicken and add an extra can of black beans or chickpeas to keep the protein and fiber high.
- Make it vegan – Skip the chicken and swap the honey for maple syrup for a fully plant-based version.
- Swap the protein – Ground turkey, shredded rotisserie chicken, or grilled steak all work well in place of the chicken breast. Or even add my air fryer salmon on top!
- Turn up the heat – Add a diced jalapeño or a pinch of cayenne if you like more spice.
- Add avocado – Fold in diced avocado right before serving for extra creaminess; add it fresh since it won’t hold up well if prepped ahead.
- Serve it as a dip – Scoop this up with tortilla chips or crackers for an easy appetizer or snack version.
Meal Prep & Storage
- Fridge storage: Store in an airtight container in the fridge for up to 3-4 days — the lack of lettuce means this salad holds up beautifully without getting soggy or wilted.
- Meal prep tip: This salad is an easy one to prep ahead for the week — portion it into individual containers right after making it so lunch is grab-and-go every day.
- Dressing timing: Since there’s no lettuce to wilt, you can toss everything together right away and it’ll still taste fresh days later — no need to store the dressing separately.
- Freezer note: This one’s best enjoyed fresh from the fridge; the fresh veggies don’t hold up well frozen and thawed.
- Scaling up: Doubling this recipe is easy if you’re prepping for a bigger crowd or want extra for the week — just use a large enough bowl to toss everything evenly.
