For the Salad:

  • Sweet potatoes – Peel them or leave the skin on for extra fiber. Cut them into bite-size cubes so they roast evenly. Butternut squash works well as a swap.
  • Chickpeas – Drain and rinse them, then pat them dry so they roast instead of steam. White beans also work.
  • Red onion – Roasted red onion turns sweet and mellow, so it won’t overpower the salad. A yellow onion or shallot also works.
  • Kale – Curly or lacinato kale both work well. Remove the tough stems and chop the leaves into small pieces. Shredded Brussels sprouts or shredded cabbage hold up just as well for meal prep.
  • Cooked chicken breast – Use leftover baked chicken, grilled chicken, or rotisserie chicken to save time. Chicken thighs or turkey are also good swaps.
  • Olive oil – Avocado oil also works well for roasting.
  • Spices – Garlic powder, dried thyme, smoked paprika, and cumin give the sweet potatoes and chickpeas a smoky, savory flavor. Regular paprika works if you don’t have smoked paprika.

Maple Dijon Vinaigrette:

  • Apple cider vinegar – It adds a bright, tangy, fall-friendly flavor. White wine vinegar or red wine vinegar also work.
  • Dijon mustard – It adds tang and helps the dressing emulsify. Whole grain mustard works if you want more texture.
  • Maple syrup – Use pure maple syrup for the best flavor. Honey works as a swap.
  • Olive oil – Use extra virgin olive oil for the most flavor.
  • Dried thyme – It connects the dressing to the roasted vegetables. Fresh thyme works too. Use about three times as much.

How to Make Chickpea Sweet Potato Salad

For complete instructions, please check out the recipe card at the bottom of this post.

  1. Preheat the oven to 425°F and set aside a sheet pan.
  2. Add the cubed sweet potatoes, chickpeas, and chopped red onion to the sheet pan. Drizzle with olive oil and sprinkle with the garlic powder, dried thyme, smoked paprika, and cumin. Toss to coat and spread everything out in a single layer.
  3. Roast for 25 to 30 minutes, flipping halfway through, until the sweet potatoes are tender and lightly caramelized on the edges.
  4. While the vegetables roast, add the apple cider vinegar, Dijon mustard, maple syrup, olive oil, and dried thyme to the bottom of a large bowl and whisk together.
  5. Add the chopped kale to the bowl with the dressing. Massage the kale with your hands for 1 to 2 minutes, until it softens and turns a deeper green.
  6. Let the roasted vegetables cool for a few minutes, then add them and the chicken to the bowl with the kale.
  7. Serve right away, or divide the salad into four containers for easy grab-and-go lunches.

Tips and Variations

Tips for the Best Salad

  • Dry the chickpeas well – Patting them dry after rinsing helps them roast up golden instead of steaming on the pan.
  • Don’t crowd the pan – Give the sweet potatoes room to caramelize. If your sheet pan is on the smaller side, split everything between two pans.
  • Cut the sweet potatoes evenly – Bite-size, even cubes roast at the same rate, so you won’t end up with some mushy pieces and some firm ones.
  • Massage the kale – Just a minute or two with the dressing makes the kale tender and much more enjoyable to eat.
  • Cool before storing – Letting the roasted vegetables cool completely before tossing helps the salad stay fresh for meal prep.

Easy Variations

  • Add cheese – Crumbled feta or goat cheese adds a creamy, tangy contrast to the sweet potatoes.
  • Add crunch – Toasted pepitas, pecans, or walnuts add great texture and a little extra fiber.
  • Make it extra fall – Toss in dried cranberries or chopped apple for a sweet, seasonal twist.
  • Make it heartier – Stir in cooked quinoa or farro for an even more filling meal.
  • Swap the protein – Rotisserie chicken, leftover turkey, or salmon all work well. For a vegetarian version, skip the chicken and add a second can of chickpeas or crispy baked tofu.
  • Add a little heat – Add a pinch of cayenne or red pepper flakes to the spice mix.

Meal Prep & Storage

  • Meal prep it – This salad is made to be dressed ahead. Toss everything with the vinaigrette, divide it into four containers, and lunch is ready for the next few days.
  • Prep the components – To make it even faster, roast the sweet potatoes, chickpeas, and red onion and cook the chicken ahead of time. Then you can toss everything together in about five minutes when you’re ready.
  • Store it in the fridge – Keep the salad in airtight containers in the fridge for up to 3 to 4 days. The kale softens a bit over time, but it stays hearty and delicious.
  • Serve it cold or warm – Enjoy it straight from the fridge, or microwave it for 30 to 60 seconds for a cozier version. The kale will wilt slightly when warmed.
  • Freezing – Don’t freeze the assembled salad, because the kale and dressing won’t thaw well. The cooked chicken can be frozen on its own for up to 1 month.

Recipe FAQs

Can I make this sweet potato chickpea salad recipe ahead of time?

Yes, it’s made for it. Kale is sturdy enough to hold up to the dressing, so you can toss everything together and store it in the fridge for up to 3 to 4 days. It’s an easy one to prep on Sunday for lunches throughout the week.

Is chickpea sweet potato salad healthy?

Yes. Each serving has 30 grams of protein and 10 grams of fiber, which makes it a filling, balanced meal. Sweet potatoes and kale are also rich in vitamin A and potassium, and the chickpeas add plant-based protein and fiber.

Do I need to massage the kale?

Honestly…yes. It really makes a big difference. Massaging the kale with a little dressing for a minute or two softens the leaves and takes away some of the bitterness, so it’s tender and easier to eat.

Can I make this salad vegetarian or vegan?

Yes. Skip the chicken and add a second can of chickpeas. The maple Dijon vinaigrette is already vegan, so no other changes are needed. Keep in mind that the protein per serving will be lower without the chicken.

Can I serve chickpea sweet potato salad warm?

Yes. It’s great cold, but you can also toss the warm roasted vegetables right in or reheat a portion in the microwave for 30 to 60 seconds. The kale will wilt slightly, which makes it a cozier option on a chilly day.
