Preheat. Preheat oven to 350°F and spray an 8x8" or 9x9" pan with nonstick cooking spray. Set aside.
Blend eggs. To a blender canister, add eggs, cottage cheese, shredded cheese, and seasonings. Blend on high for 1 minute, or until mixture is completely pureed and smooth.

Assemble egg bake. Add chopped spinach and Canadian bacon to the prepared baking dish, then pour the blended eggs on top.

Bake. Bake for 25-35 minutes, or until the center of the egg casserole is set and does not jiggle when you gently jostle the pan.
Serve. Let egg bake cool for 5-10 minutes before serving, then serve and enjoy! It can also be sliced and transferred to airtight containers for meal prep, and refrigerated for 3-4 days. Enjoy!
