    This Mango Cucumber Salad is so simple but packed with flavor. It's crisp, sweet, bright, citrusy, with the subtle chile flavor from Tajín. It makes an easy, refreshing, light side dish or snack.

    • Mango: Sweet and juicy, use the ripest fresh mango you've got!
    • Cucumber: Adds a crisp, refreshing flavor. I prefer seedless varieties, like English and Persian cucumbers, but use whatever you have.
    • Lime: Enhances the citrusy flavors of Tajín.
    • Tajín: Tajín is a Mexican spice blend made with a variety of peppers, lime, and salt. Tajín tastes bright, tangy, citrusy, and has a slight chile flavor - and it's not very spicy at all! You can find it at most grocery stores or on Amazon.
    • Honey: Just a little complements the lime and Tajín flavors and draws out the natural sweetness of mango.

    How to Make Mango Cucumber Salad

    1. Chop mango and cucumber and add to a large bowl.
    2. Whisk together rice wine vinegar, lime juice, honey, and tajin. Pour over mango and cucumber and stir to combine.
    3. Salad can be served immediately, or can be chilled for 20-30 minutes. Enjoy!

    Can I use frozen mango instead of fresh?

    You can, just thaw the mango first.

    How do I peel a mango?

    To peel a mango, slice the sides off from the pit. Then you can either cut the side pieces into strips, cut off the peel, and dice the mango strips. Alternatively you can create crosshatch cuts into the mango sides and use a spoon to scoop away from the peel.

    Where can I find Tajín?

    You can find Tajín at most grocery stores or on Amazon.

    Is Tajín spicy?

    Tajín isn't very spicy and has very little heat. It tastes bright, tangy, citrusy, and has a slight chile flavor.

    What can I substitute for Tajín?

    If you can't find Tajín, look for any kind of chili lime seasoning blend your store may offer. If you still can't find anything, in this recipe you can use ½ teaspoon chili powder, ¼ teaspoon cumin, and ¼ teaspoon garlic salt.

    How should I serve this salad?

    Mango Cucumber Salad is very light, so think of it as more of a side dish than an entrée salad. Pair it with your favorite balanced meals, like Healthy Sweet and Sour Chicken.

    This salad is also delicious to snack on (especially when paired when a fat or protein for more satiety). You can enjoy it as part of a snacky meal, too, especially with dips like Healthy Buffalo Chicken Dip or Red Pepper Feta Dip.

    Storage

    This Cucumber Mango Salad can be stored in an airtight, refrigerated container for up to 3-5 days.
