    This cucumber lime agua fresca with mint is the epitome of a refreshing beverage. Perfect for summer, all you need is a few simple ingredients and a blender.

    When I created my How to Make Agua Frescas tutorial, I wanted to include several specific recipes. What better way to showcase the potential and fun you can have with it?

    This cucumber lime agua fresca with mint was at the top of my list to be included. It has the same vibes of spa water, but better. It's just so light and refreshing!

    What's an Agua Fresca?

    So, what's an agua fresca?

    An agua fresca is a non-alcoholic blended beverages of fruit or grains, lime juice, and water. (Yes, cucumbers are technically a fruit!) Often there is added sugar in agua fresca recipes. Here, I chose not add any in order to really let the cucumber, lime, and mint shine.

    Is a Cucumber Lime Agua Fresca Healthy?

    So, is an agua fresca healthy?

    Well, as a dietitian, my go-to response to, "is it healthy?" is usually, "it depends!" And the same answer applies here!

    Health (and what's considered healthy) is always relative, and very subjective. But from a standpoint of nutrient density, cucumbers are absolutely a nutrient-dense food.

    Cucumbers have a myriad of health benefits, including:

    • They are incredibly hydrating, with a 96% water content.
    • High amounts of antioxidants may help reduce chronic disease risk.
    • Cucumbers may help with digestive regularity due to their water and fiber content.

    So from a general nutrition perspective, this cucumber lime agua fresca can absolutely be enjoyed as part of a balanced diet!

    Ingredients

    The ingredients couldn't be simpler. All you need is:

    • Cucumbers
    • Water
    • Lime juice
    • Mint
    • Sweetener (if desired)

    Pro Tip: if you want your agua fresca to stay a pretty soft green color, peel your cucumbers before blending.

    Instructions

    To make this cucumber agua fresca, combine all the ingredients into a high powered blender. Next, blend for a minute, or until all ingredients are smoothly pureed together. Then pour in a glass and enjoy!

    Feel free to pour over ice if you like very cold beverages. It makes it even more refreshing!

    Does it Matter What Kind of Blender You Use?

    Any blender works! The most important thing to consider is that your blender is high-powered enough to smoothly blend and puree the fruit/ grains you're using. Some of the blenders I have used and recommend include (affiliate links):

    Recipe Variations or Substitutions

    Flavor Addition Variety

    I personally love the addition of mint and how it pairs so nicely with the cucumber and the lime, but you can skip it if you prefer. Instead, you can also get creative with other flavor additions, lime fresh ginger or basil.

    Try Coconut Water

    One afternoon my daughter and I used half water and half coconut water, and WOW did we love it! The coconut water added the slightest about of subtle sweetness. Plus there was a trace bit of coconut flavor that paired very nicely with the other flavors of cucumber, mint, and lime.

    Sweeten to Your Preference

    Everyone in my family truly enjoys the simplicity of this beverage without sweeteners, but we all have difference preferences.

    If you prefer your cucumber lime agua fresca a little sweeter, feel free to add a little sweetener to taste. Sugar is used in traditional recipes, but you can also use sweeteners like:

    • Coconut sugar
    • Agave syrup
    • Honey
    • Non-nutritive sweeteners like stevia, monk fruit, or allulose.

    Cucumber Mint Agua Fresca

    Ingredients

    • 1 cup cucumber slices can peel if desire
    • 1 cup water
    • 1 tablespoon lime juice juice from ½ a lime
    • 2 mint leaves
    US Customary - Metric

    Instructions

    • Combine all ingredients in a high-powered blender. Blend on high for 60 seconds, or until all ingredients are fully pureed.

    Notes

    Cucumber Mint Agua Fresca can be served immediately over ice, or can be chilled in the refrigerator up to 72 hours. If you're making in advance, be sure to give it a good stir or shake before serving (there are no additives, so separation will occur!)
    Can substitute coconut water for water or use half water and half coconut water for a refreshing, naturally sweet, electrolyte-laden addition.
    If you prefer a lighter color and prettier beverage, it's recommended you peel your cucumber first. 😉
