Cucumber Mint Agua Fresca is a refreshing summer beverage of blended cucumber, water, lime, and mint. Perfect for Cinco de Mayo and summertime festivities!
Agua frescas have become my hot and humid weather beverage of choice lately, and this variation of a Cucumber Lime Agua Fresca is one of my go-to flavor variations. Agua frescas are non-alcoholic blended beverages of fruit (yes, cucumbers are actually a fruit!), lime juice, and water. Often there is added sugar in agua fresca recipes, but I chose not add any to mine to really let the mellow cucumber and mint flavors shine.
Cucumbers are a fantastic addition to agua frescas because of their myriad of health benefits:
- Cucumbers are incredibly hydrating with a 96% water content.
- The antioxidants found in cucumbers may help reduce chronic disease risk.
- Cucumbers may help with digestive regularity due to their water and fiber content.
I love the addition of mint in my Cucumber Mint Agua Fresca, but you can opt to leave it out or play with other flavor enhancers as well (like fresh ginger or basil).
I also tried this Cucumber Mint Agua Fresca one afternoon with half water and half coconut water, and my toddler and I both loved it. The cucumber water added the slightest amount of subtle sweetness and a trace coconut flavor that complemented the flavors of cucumber and mint well.

Cucumber Mint Agua Fresca
Cucumber Mint Agua Fresca is a refreshing summer beverage of blended cucumber, water, lime, and mint. Perfect for Cinco de Mayo and summertime festivities!
free from: gluten, dairy, soy, egg, fish, shellfish, treenuts, peanuts
Ingredients
- 1 cup cucumber slices can peel if desire
- 1 cup water
- 1 tbsp lime juice juice from 1/2 a lime
- 2 mint leaves
Instructions

Combine all ingredients in a high-powered blender. Blend on high for 60 seconds, or until all ingredients are fully pureed.
Recipe Notes
Cucumber Mint Agua Fresca can be served immediately over ice, or can be chilled in the refrigerator up to 72 hours. If you're making in advance, be sure to give it a good stir or shake before serving (there are no additives, so separation will occur!)
Can substitute coconut water for water or use half water and half coconut water for a refreshing, naturally sweet, electrolyte-laden addition.
If you prefer a lighter color and prettier beverage, it's recommended you peel your cucumber first. 😉
