    These mini cheese stuffed bread rolls aren't only gluten-free, but grain-free as well, thanks to a high quality pizza dough mix from Simple Mills! They're stuffed with mozzarella and then brushed with olive oil, herbs, and parmesan. They make the perfect small bite appetizer dipped in marinara or pesto or side to some soup or chili!

    Gluten-Free Cheese Stuffed Bread Rolls

    So, first of all, this post is not sponsored - I'm just a big fan of Simple Mills! Because real talk? Everyone needs some convenient food options at some points, this dietitian included! Unfortunately, one of my biggest frustrations with eating gluten-free is how many ingredients are in convenient food items and how most of them are very high starch and high glycemic index - not how I prefer to eat most of the time.

    Simple Mills makes the best naturally gluten-free and grain-free mixes and crackers. They're lower glycemic index, made with few ingredients, and all the ingredients are simple and recognizable! Take the Simple Mills Pizza Dough Mix (affiliate link): almond flour, arrowroot, flax meal, cauliflower, baking soda, oregano, cream of tartar, and garlic. That's it!

    How to Make Bite-Sized Cheesy Rolls

    It's pretty easy to make this delicious grain-free appetizer!

    • Just mix up the pizza dough according to package directions (you'll need to add a little apple cider vinegar, olive oil, and water).
    • Divide the dough into 18 pieces (I used a cookie scoop that holds about 2 tablespoons of dough and got 18 mini rolls exactly).
    • Cut two string cheeses into 9 pieces each. Place one cheese piece into the center of a dough ball and roll to get the dough all around it.
    • Place on a silicone mat or parchment paper-lined baking sheet. Brush the tops with olive oil, herbs, and parmesan.
    • Bake and enjoy warm! Bonus flavor points if you serve with warm marinara or pesto!

    These naturally grain-free, gluten-free mini cheesy rolls are perfect to serve during a football game or an appetizer-heavy party, like a New Year's Eve party. Try serving with some of my favorite other gluten and grain-free appetizers: 3-ingredient spinach artichoke dip, prosciutto-wrapped asparagus, and rosemary cumin roasted chickpeas.

    Or you can just serve them with some chili or soup! Our favorites are chicken and kale white bean chili, spiced sweet potato and carrot soup, and hearty vegetable chili.

    Ingredients

    • 1 box Simple Mills Pizza Dough Mix
    • 2 tablespoon apple cider vinegar
    • 6 tablespoon water
    • 3 tbsp extra virgin olive oil divided
    • 2 mozzarella string cheese sticks
    • 1 tbsp Italian seasoning
    • 2 tablespoon parmesan cheese
    US Customary - Metric

    Instructions

    • Preheat oven to 350 degrees and line a baking sheet with a silicon baking mat or parchment paper.
    • Mix pizza dough according to package directions, with apple cider vinegar, water, and 2 tablespoon oil. Divide dough into 18 pieces.
    • Slice string cheese into 18 pieces. Place a piece of cheese in the center of each piece of dough and roll into a ball. Place on baking sheet and brush the tops with remaining olive oil. Sprinkle with Italian seasoning and parmesan cheese.
    • Bake for 10-15 minutes, or until slightly browned on top. 
    • Serve warm with optional dipping sauce (i.e. marinara or pesto) and enjoy!
