Leftover Ham and Brie Sandwich with Cranberry Sauce
Anyone else in this weird time warp week between Christmas and New Year's? I don't even know what day it is! It's a little bit of a bummer, because Christmas, my favorite time of year, is over, but I'm still loving the slower pace and enjoying time with family. My husband is a teacher, so it's been amazing to have him home enjoying time with our little family! Yet I'm also really looking forward to getting back into a routine in the new year and some normalcy and productivity happening again (ya know, before a newborn changes it up again in February!).
One of the simple joys we love in this time warp week is making fun lunches together at home. And Christmas leftovers are PERFECT for that!
This leftover ham and brie sandwich has it all: salty ham and creamy brie, fresh greens, tangy mustard, and sweet-tart cranberry sauce. All pressed between two pieces of whole grain gluten-free bread for a delicious subtle nuttiness and chew. I'm pretty sure we could make this for lunch every day for the rest of our lives and my husband would never complain.
What You Need to Make this Ham and Brie Sandwich
- Leftover ham: any type will do! We used my leftover pomegranate maple glazed ham and it was great! If ham isn't your thing, you can totally use something like turkey, too!
- Brie cheese: I'm a sucker for the salty creaminess of brie cheese! It goes amazing with this sandwich, getting perfectly melty and delicious.
- Spinach: sometimes veggies can be a little lacking over the holidays, so sneaking some greens in this sandwich is a great way to add a fresh flavor and make the transition back to more veggies all the time!
- Cranberry sauce: Adds the best sweet-tart flavor! We used my apple cranberry sauce.
- Dijon mustard: gives a subtle little tang that adds another layer of flavor.
- Whole grain bread: I used a gluten-free whole grain bread, but I love the nutty crunch of whole grains in the bread. Adds even more texture and flavor to the sandwich.
Once you assemble your sandwich, all you need to do is brush the outside surfaces of the bread with a little extra virgin olive oil (or butter) to help it crisp up, then grill it in a panini press or ceramic skillet. Leftover Ham and Brie Sandwich with Cranberry Sauce
Ingredients
- 2 slices gluten-free whole grain bread
- 1 teaspoon extra virgin olive oil
- ½ teaspoon dijon mustard
- 1 oz brie cheese
- 2 oz leftover ham
- 2 tablespoon cranberry sauce
- ¼ cup spinach
Instructions
- Lightly brush the outside surfaces of the bread with olive oil. Layer the remaining ingredients on the inside of the sandwich (I like to spread the brie cheese on one interior surface and the mustard on the other side, then place spinach on top of mustard, ham, and spoon cranberry sauce on ham).
- Place sandwich on a ceramic skillet or griddler/ panini press over medium high heat and grill for 5 minutes, or until cheese is melty and bread is golden and crisp. (If you're using a skillet, you will need to flip your sandwich partway through and add a few extra minutes cooking time.)
- Serve immediately and enjoy!
