Why This Butterfly Pea Latte is SO Good:

  • Butterfly pea flowers, what you brew to make butterfly pea tea, have subtle floral and herbal notes.
  • While often nicknamed, “blue matcha,” fun fact: this tea isn’t matcha at all!
  • Because of this, this blue latte has zero caffeine, so it’s not stimulating at all.
  • Research suggests that these butterfly pea flowers are anti-inflammatory with high amounts of antioxidants.
  • And of course, blue matcha lattes are quite beautiful!

ingredients to make a blue butterfly pea latte
  • Butterfly Pea Flower Tea: the easiest place to find butterfly pea powder is Amazon. You can find butterfly pea tea with whole dried butterfly pea flowers, ground in tea bags, or (what I use in this recipe), a ground butterfly pea powder.
  • Hot Water: Bloom the tea in a bit of hot water first, before combining with milk.
  • Milk: Use whatever milk you like to drink!
  • Vanilla: a tiny touch of vanilla extract helps make this latte super cozy
  • Honey: for sweetness. Feel free to adjust to your tastes and use whatever sweetener you prefer. (If you need a non-nutritive sweetener, my favorite is allulose!)

Step-by-Step Directions

  1. Whisk or froth 2 teaspoons of dried, ground butterfly pea flowers with 1/4 cup hot water until the tea is fully dissolved.
  2. Add vanilla and honey and stir.
  3. Froth the warmed milk and pour it over the blue tea. Serve immediately and enjoy!

Expert Tips & Variations

  • Iced Blue Matcha Latte: For an iced latte, pour the sweetened blue tea (after step 2) over a glass of ice. Don’t warm or froth the milk and add directly to the iced glass. Stir and enjoy!
  • Sugar-Free Blue Latte: Skip the honey and substitute your favorite sugar-free, non-nutritive sweetener, like allulose or stevia. Use an unsweetened variety of milk.
  • General Tip: be sure the tea has fully dissolved in the hot water before progressing with the rest of the latte! Especially if you’re making it iced, it’s harder to dissolve in cold water than it is hot.
