  • Bananas – 3 fresh bananas, sliced
  • Peanut Butter – warmed up slightly helps it spread over the sliced bananas more easily.
  • Chocolate – use your favorite chocolate chips or chopped chocolate bars (feel free to use no added sugar if you prefer!)
  • Coconut Oil – optional, but I find it really helpful to thin the chocolate slightly, which helps it more evenly spread into a thin layer.
  • Toppings – optional, of course, but have fun with toppings! I use flaky salt here, but have also used chopped peanuts and chopped almonds.

I like to use a quarter sheet pan, but you can even use a plate or a larger pan – make it work for you! Line it with parchment paper, then create layers of banana slices, then peanut butter.

Melt chocolate with coconut oil, then pour and spread over the peanut butter layer. Add any desired toppings, like crushed nuts or flaky salt, then freeze at least one hour, or until set. Slice, then enjoy!

Tips and Variations

  • Line pan with parchment paper to make removing the banana bark (and clean up!) as easy as possible.
  • Viral videos online suggest “smashing” the bananas down slightly to create a more solid layer, but I’ve got to be honest – I prefer the texture of regular sliced bananas! The peanut butter will fill in any gaps, plus it makes it easier by skipping a step.
  • Add a boost of protein by doing half vanilla Greek yogurt and half peanut butter for the peanut butter layer. You can even add a scoop of protein powder, too!
  • No added sugar – use your favorite chocolate chips or chopped chocolate bars that have no added sugar (Lily’s is a great brand!)
  • Dairy-Free – banana bark is easily dairy-free, just make sure you’re using a dairy-free chocolate (I love the Enjoy Life brand).
  • Nut-Free – use sunflower seed butter for a nut-free option!
  • Peanut Free – skip the peanut butter and swap your favorite other nut butter, like almond butter or cashew butter.

How to Store

Banana bark is a frozen treat, so it’s got to be stored in the freezer! I like to slice, then store the frozen pieces in an airtight container in the freezer. It’ll stay in the freezer for up to one month!

Ingredients

  • 3 bananas sliced
  • ½ cup peanut butter
  • ½ cup chocolate chips
  • 1 teaspoon coconut oil
  • any optional toppings (i.e. crushed peanuts, almonds, white chocolate drizzle, flaky salt, etc.)

Instructions

  • Line a quarter sheet pan with parchment paper, then arrange the banana slices in a single layer. They shouldn't be overlapping, but they should be touching as close together as possible.

  • Heat peanut butter in the microwave for 30 seconds (this will help it spread over the banana slices easier). Stir, then pour over the sliced bananas and spread into an even layer.

  • Heat chocolate chips and coconut oil together in the microwave for 30-60 seconds, stir, then microwave another 15-30 seconds and stir again until fully melted. Pour the chocolate on top of the peanut butter and use a rubber spatula to spread it evenly.

  • If using any toppings, add those now while the chocolate is still melted. Transfer tray to the freezer and freeze for one hour, or until the banana bark is frozen solid.

  • Slice into small squares, then serve and enjoy! Any leftovers can be kept in the freezer.
