  • Chocolate – I generally use semisweet chocolate, but you can use dark or milk if that’s your preference.
  • Coconut Oil – I prefer to add a little coconut oil to my chocolate as I melt it. It allows it to get a little thinner, but you can skip if you want!
  • Berries – I use fresh strawberries (sliced), raspberries, and blueberries.

How to Make Chocolate Berry Bark

Start by melting your chocolate. You can use a double boiler, but for simplicity, speed, and less dishes, I typically go the microwave route. Microwave for 30-60 seconds, stir, then continue to microwave in additional 15-30 second intervals until the chocolate is melted. Once melted, spread it on a parchment paper lined quarter sheet pan (or truly any surface you’ve got!).

Then place your berries all over the melted chocolate, refrigerate, and use a knife to slice into squares when it’s hardened!

Berry Bark Variations

  • Use freeze-dried berries — I love fresh berries in summertime (and often have a surplus from my garden!), but you can also use freeze-dried berries, too.
  • Swap in other fruit — have fun with it! Try a tropical variation with bananas, mango, and pineapple instead of the berries.
  • Add seeds or nuts — this adds a nice crunch, as well as some more fiber and healthy fats. Pumpkin seeds, almond slivers, crushed walnuts, pecans, macadamia nuts, toasted coconut shreds, or even a swirl of peanut butter are all fun options.
  • Dairy-Free — be sure to use dairy-free chocolate to easily make this as a simple, dairy-free treat.
  • No Added Sugar — while there will still be naturally occurring sugars in the fruit, you can use a no added sugar chocolate for a treat with zero added sugars.

How to Store

Once the bark has hardened and been cut into smaller pieces, I simple store the pieces in an airtight container in the fridge for up to 3-5 days.

Note that the longer it sits, the berries will likely seep a little juice, but truly? No one in my family seemed to mind. ; )

Ingredients

  • 1 cup semisweet chocolate chips
  • 2 teaspoons coconut oil
  • ½ cup strawberries sliced
  • â…“ cup raspberries
  • â…“ cup blueberries

Instructions

  • Add chocolate chips and coconut oil to a small, microwave-safe bowl. Microwave for 30 seconds, then stir. Continue to microwave in 15-30 second intervals, followed by stirring, until chocolate is fully melted. Pour melted chocolate onto a parchment paper-lined quarter sheet pan (or plate) and use a rubber spatula to spread into a thin layer.

  • Top melted chocolate with sliced strawberries, raspberries, and blueberries. Place the pan in the refrigerator and refrigerate for 30-45 minutes, or until chocolate has hardened.

  • Remove from fridge and transfer to a cutting board. Use a chef's knife to cut into 12 pieces (or more, for smaller bites), then transfer pieces to an airtight container and store in the fridge for up to 5 days. Enjoy!
