Instructions
Line a quarter sheet pan with parchment paper, then arrange the banana slices in a single layer. They shouldn't be overlapping, but they should be touching as close together as possible.

Heat peanut butter in the microwave for 30 seconds (this will help it spread over the banana slices easier). Stir, then pour over the sliced bananas and spread into an even layer.

Heat chocolate chips and coconut oil together in the microwave for 30-60 seconds, stir, then microwave another 15-30 seconds and stir again until fully melted. Pour the chocolate on top of the peanut butter and use a rubber spatula to spread it evenly.

If using any toppings, add those now while the chocolate is still melted. Transfer tray to the freezer and freeze for one hour, or until the banana bark is frozen solid.
