  • Chicken – you need already cooked chicken. I usually prefer my baked thin sliced chicken breast (also great for meal prep!) or rotisserie chicken.
  • Celery – adds a delicious crunch to the salad.
  • Greek Yogurt – the base of the dressing is Greek yogurt for an extra protein boost.
  • Lite Mayo – a little mayo is used for texture, but feel free to skip/ sub more Greek yogurt if you’re not a mayo fan.
  • Dijon Mustard – adds the classic zesty, mustardy flair to a creamy honey mustard dressing.
  • Honey – truly a key component, but you can sub maple syrup if you prefer.
  • Seasonings – garlic powder, onion powder, and a pinch of salt and pepper!

Mix the dressing ingredients together, then pour over the chopped chicken and celery. Toss to combine, then enjoy!

Tips and Variations

  • Add Grapes – fresh grapes, like in my poppy seed chicken salad, are a delicious addition!
  • Dried Cranberries – similar to my cranberry chicken salad, dried cranberries pair with the flavors delicious here, and add a great chewy texture.
  • Add More Crunch – the celery adds a delicious crunch, but you can also add some sliced almonds, pecans, or another crunchy addition you enjoy!

Meal Prep: Storing & Reheating

Store this chicken salad in an airtight container and keep in the refrigerator for up to 3 days.

With the fresh, crunchy celery and the Greek yogurt, I don’t recommend freezing chicken salad.

Ingredients

  • 3 cups cooked chicken breast cubed or shredded
  • 2 stalks celery diced
  • ½ cup plain Greek yogurt
  • 2 tablespoons light mayo
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • salt and pepper to taste

Instructions

  • Add the dressing ingredients to a large bowl and whisk until combined.
    1/2 cup plain Greek yogurt, 2 tablespoons light mayo, 2 tablespoons Dijon mustard, 2 tablespoons honey, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, salt and pepper to taste
  • To the dressing, add the chicken and celery and toss in the dressing until everything is evenly mixed up.
    3 cups cooked chicken breast, 2 stalks celery
  • Serve as desired (i.e. as is, with crackers, chips, veggies, on a sandwich or wrap, etc.), and enjoy!
