This ground chicken taco meat is one of those recipes that’s so dang simple, it’s almost hard to call it a recipe. But, I don’t gatekeep, and given how often we make this ground chicken cauliflower combo, it was time I share it here! Plus, I know y’all love easy, too!

  • Hidden Veggie – I don’t love the concept of hidden veggies in the sense of lying to your kids about it (I’m always an open book!), but I love the concept of adding more vegetables when it’s easy and delicious!
  • Quick + Easy – my favorite combo lol. But truly, in less than 15 minutes, you’ve got a veggie-packed lean protein ready to eat.
  • Versatile – there are so many ways you can eat this cauliflower chicken turkey meat! In tacos, wraps, salads, rice bowls/ other grain bowls, nachos, fajitas, stuffed into bell peppers, and more!
  • Meal Prep Friendly – the cauliflower doesn’t just get some extra veggies into your meal, but it helps prevent the ground chicken from drying out. It stays nice and juicy from the moisture the cauliflower provides, making this a fantastic make ahead or meal prep protein.

  • Ground Chicken – you need a pound of lean ground chicken (although yes, this recipe works with ground turkey, ground beef, etc.)
  • Cauliflower Rice – one 12oz bag frozen cauliflower rice
  • Taco Seasoning – you can use any taco seasoning blend you prefer. I enjoy either homemade or the Siete Taco Seasoning blend, but you need 1/4 cup of taco seasoning.

In a large pan, add the ground chicken and break it up into crumbles as it cooks. Once there is no more pink, add a bag of thawed cauliflower rice and the taco seasoning, stir, and cook 1-2 more minutes until any excess moisture is cooked off. And that’s it!

Tips and Variations

  • Thaw the cauliflower rice. I recommend thawing the cauliflower rice while the chicken cooks. It helps keep the cooking time shorter overall, which can help keep the chicken juicier. That said, I’ve totally added it frozen before, and it still works!
  • Add lime juice. I’m a huge fan of citrus juices for added brightness and flavor, and find a squeeze or two of fresh lime juice is delicious here!
  • Make it cheesy – add a handful of cheese after the cauliflower rice and taco seasoning has been stirred in, then stir until it melts. Now you’ve got cheesy chicken taco meat!
  • Swap the protein – I use ground turkey often in place of ground chicken here! Any ground meat, including ground beef, works, but the color contrast with the cauliflower is more noticeable with red meat.

Meal Prep: Storing & Reheating

Like I mentioned earlier, this ground chicken taco meat is perfect for meal prep because that hidden cauliflower rice keeps it nice and juicy!

Store in the refrigerator in an airtight container for up to 4 days. The meat can also be frozen in an airtight, freezer-safe container for up to 3 months. Thaw overnight in the fridge, or on a low power setting in the microwave.

Reheat in the microwave or in a skillet over medium heat. You may need to add an extra tablespoon or two of water if heating in a skillet, due to potential moisture loss. I also like to cover my microwave container with a damp paper towel to also lock in more moisture.

Ingredients

  • 1 pound lean ground chicken
  • 12 ounces riced cauliflower thawed
  • ¼ cup taco seasoning low sodium if available

Instructions

  • Heat a large skillet over medium-high heat. Add ground chicken and break up using a meat chopper or spatula. Note here, that if your cauliflower rice is not yet thawed, go ahead and thaw it in the microwave while the chicken cooks so everything comes together faster.
    1 pound lean ground chicken
  • Once chicken is cooked through, add cauliflower rice and taco seasoning. Continue to cook while stirring until everything is thoroughly combined and there isn't too much excess moisture left sitting on the bottom of the pan.
    12 ounces riced cauliflower, 1/4 cup taco seasoning
  • Remove from heat and serve however you desire! On taco salad, sweet potatoes, in tacos, fajitas, nachos, wraps, quesadillas, with roasted veggies, on rice bowls — have fun with it, and enjoy!
