Heat a large skillet over medium-high heat. Add ground chicken and break up using a meat chopper or spatula. Note here, that if your cauliflower rice is not yet thawed, go ahead and thaw it in the microwave while the chicken cooks so everything comes together faster.
1 pound lean ground chicken
Once chicken is cooked through, add cauliflower rice and taco seasoning. Continue to cook while stirring until everything is thoroughly combined and there isn't too much excess moisture left sitting on the bottom of the pan.
12 ounces riced cauliflower, 1/4 cup taco seasoning
Remove from heat and serve however you desire! On taco salad, sweet potatoes, in tacos, fajitas, nachos, wraps, quesadillas, with roasted veggies, on rice bowls -- have fun with it, and enjoy!
