Pineapple Pico de Gallo

This Pineapple Pico de Gallo is sweet and zesty, full of so much flavor, and nutrition, too! Perfect for an appetizer dip or pairing with a protein, like salmon bowls or fish tacos!

  • So fresh – the fresh, juicy pineapple steals the show, but this pico is loaded with lots of other fresh ingredients, too!
  • Flavorful – this pico de gallo has it all. Sweet pineapple, savory onion, umami from the tomatoes, herby cilantro, a little bite from the jalapeno pepper — it’s so good!
  • Easy (ish) to make – no cooking required! The hardest part is chopping, but you can absolutely use a veggie chopper to help make that job go faster!

  • Pineapple – you need diced fresh pineapple (loaded with antioxidants!)
  • Tomatoes – I like to use diced Roma tomatoes, but you can use any kind of tomatoes you have, including everything from beefsteak to cherry!
  • Bell Pepper – you can use any color you prefer, just be sure to dice it.
  • Red Onion – a little goes a long way! Be sure to dice it. If you really aren’t a fan, you can skip it, or try my favorite trick – soak the diced onion in ice water for 10 minutes to remove some of the bite, but keep the flavor.
  • Jalapeno Pepper – adds flavor, and don’t worry, it doesn’t make it spicy! Removing the seeds and the membranes from inside the pepper removes the heat!
  • Cilantro – to each their own, but I love a good cilantro in pico de gallo!
  • Lime Juice – essential to help tie all the flavors in together!
  • Salt – a little at the end, just adjust to taste (and if you’re serving with salty chips, make sure you don’t go overboard/ keep that into consideration when you’re tasting your pico!)

How to Make Pineapple Pico de Gallo

  1. Dice and chop everything and add it to a large bowl.
  2. Squeeze lime juice over the top, give it a stir, and add a touch of salt, if/ as needed.

Tips and Variations

  • Careful with Adding Salt – I add a pinch of salt myself, but please taste your pico with whatever chips or crackers you’re serving them with, if that’s how you’re serving. Some can be quite salty, and you may find you don’t need much salt at all added (if any!).
  • Try a veggie chopper – I know the chopping can get tedious, so if it makes this recipe easier, faster, or more accessible for you in any way, try a veggie chopper! I use and love this one.
  • Swap half the pineapple for another fruit – doing half pineapple/ half peach or half pineapple/ half mango is a really fun twist on this recipe!
  • Add Black Beans – I love a salsa with added black beans, and this pineapple pico de gallo tastes so good with black beans, I almost wrote the recipe to include them by default! So if you’re a bean person, definitely give it a try!

How to Store

I love to add this recipe to my weekly meal prep so that I can have it ready to go for both healthy snacking and to add to an easy bowl, paired with a protein like my Easy Air Fryer Salmon (takes less than 10 minutes and the Tajin seasoning goes perfectly with this pico!).

Just store in a sealed, airtight container in the fridge for up to 3 days.

Ingredients

  • 2 cups pineapple diced
  • 2 Roma tomatoes diced
  • 1 red bell pepper diced
  • ½ red onion diced
  • 1 jalapeno seeds and membranes removed, diced
  • ½ cup cilantro chopped
  • 1 lime juice
  • salt to taste

Instructions

  • Add all diced and chopped ingredients to a large bowl. Squeeze lime juice on top and toss to combine.
    2 cups pineapple, 2 Roma tomatoes, 1 red bell pepper, 1/2 red onion, 1 jalapeno, 1/2 cup cilantro, 1 lime
  • Taste the pico and adjust seasoning with salt, if needed. Serve immediately and enjoy!
