Weekly Meal Prep | March 22

Welcome back to another weekly meal prep! My main goal for food preps is to make my life easier during the week — and namely, to make it easier for my family and I to eat more protein and more plants.

Here’s what’s on deck for this week:

  1. Overnight Oats with Frozen Fruit – this is a great high fiber, high protein breakfast that takes just 5 minutes to prep!
  2. Baked Turkey Meatballs – another quick to prep recipe for an easy protein addition to meals or lunchboxes that my whole family loves.
  3. Sheet Pan Chicken Fajitas – chopping is the biggest component of this easy meal, so I pre-chopped and seasoned everything so all I have to do is toss it on a sheet pan and roast for a super easy dinner.
  4. Hard Boiled Eggs – another easy protein we keep on hand for snack and meal additions! I like to add eggs to boiling water (and usually add a bit of baking soda to help them peel easier), boil for 12 minutes, then immediately transfer to an ice bath for just 5 minutes before peeling.
  5. Veggie Box – want to eat more veggies? Make them EASY! Pre-washed, chopped, and ready to go for easy snacking or adding to lunchboxes, salads, stir fries, etc.
  6. Fruit Box – make the healthier option the easy option!
  7. Ninja Creami Protein Ice Cream – my whole family is obsessed with my protein ice cream. We usually mix in some mini chocolate chips and will all share a pint for a more blood sugar-friendly sweet treat.
