Weekly Meal Prep | April 13th

Happy Sunday! Life has been feeling crazy lately, but I still find it worthwhile to get at least a little something prepped and ready for the week ahead! It truly makes the biggest difference in our weeks. We save time, feel more energized, have less stress — love it!

Greek Yogurt Chia Pudding

All you need is 1/2 cup Greek yogurt, 1/4 cup milk of choice, and 2 tablespoons of chia seeds. Stir well, cover your container, then let set in the fridge at least a couple hours or until set. You can use any flavor Greek yogurt you like. And for even more protein, check out my Protein Chia Pudding recipe.

Carrot and Cucumber Salad

Note that I prefer to package the rice/ Korean-inspired turkey separately from the carrot and cucumber salad. That way I can heat up the rice/ meat mixture, and then I’ll add the cucumber carrot salad to it afterwards, so I can get bites of everything together. SO good!

I used a cherry-flavored Greek yogurt this week, and I’ll add mini chocolate chip mix-ins. Going for a cherry garcia froyo vibe!
