Banana Sushi
This Banana Sushi is one of my kid’s favorite lunches, perfect for back-to-school packed lunches! A couple simple swaps make it higher in fiber and nut-free, too.

- Banana – of course you need a banana to make banana sushi! Go with your preferred ripeness, but make sure it’s not too soft.
- Nut or Seed Butter – I used peanut butter in the picture here, but we’ve also made it with almond butter, chocolate peanut butter, and sunbutter for our nut-free school lunches.
- Tortilla – this adds some more fiber and staying power to this banana sushi to make it a more filling lunch (and easier to roll!). I prefer a whole wheat or other higher fiber tortilla option, but you can also use a gluten-free or grain-free if that’s your preference.

Lay tortilla on a flat surface, then spread peanut butter over the whole surface area, leaving a half to full inch border around the edges. Trim the tips off the banana (if your kids prefer), then place the banana on the peanut butter on one side of the tortilla.
Wrapping the tortilla around the banana, firmly roll the banana in the tortilla until it’s completely wrapped up. Use a sharp knife to cut into sections, like sushi, and serve immediately or pack in a lunchbox.
Tips and Variations
- Nut-Free: Use Sunbutter or another nut-free spread to make this banana sushi friendly for nut allergies or nut-free schools. (Also, please ensure there are no nut ingredients in the tortilla, either.)
- Gluten-Free: Use your favorite gluten and/ or grain-free tortillas. Some gluten-free tortillas can be a lot smaller, so you can always cut the banana in half and use two tortillas.
- Dairy-Free: As long as there are no dairy ingredients in your tortilla or nut butter, banana sushi is automatically dairy-free!
- Add other spreads or toppings: Once the peanut butter layer is spread on the tortilla, you can spread or drizzle other ingredients on, like jelly or honey. You can also sprinkle other ingredients over the peanut butter, too, like sprinkles, mini chocolate chips, pumpkin seeds, sunflower seeds, hemp hearts, shredded coconut, and more. Then add the banana on top and roll as normal.
Lunch Packing Tips
I recommend using a lunchbox with separate compartments and putting the banana sushi in its own compartment or box. Definitely don’t use a bag, as it gets wayyy too messy.
When I’m packing this for lunch for one of my kids, I like to balance it out with some protein (like a no added sugar yogurt drink or crunchy chickpeas or crunchy edamame), as well as some vegetables. A string cheese is another fun option my kids like, too!
Also, be sure to add an ice pack to their lunchbox, so it stays fresh until lunchtime!

Ingredients
- 1 whole wheat tortilla
- 2 tablespoons peanut butter or other nut/ seed butter spread
- 1 banana
Instructions
- Place tortilla on a flat surface and spread peanut butter, leaving a half to one-inch border on the edges.1 whole wheat tortilla, 2 tablespoons peanut butter
- If you/ your kids aren't a fan of banana ends, slice the tips off the banana. Place the banana on top of the peanut butter on one side of the tortilla. Wrap the tortilla around the banana, tightly rolling until the tortilla is fully wrapped around the banana.1 banana
- Slice the banana into 8-9 sections to create the banana sushi. Serve immediately or pack in a lunchbox with an ice pack.
