This Banana Sushi is one of my kid's favorite lunches, perfect for back-to-school packed lunches! A couple simple swaps make it higher in fiber and nut-free, too.
If you/ your kids aren't a fan of banana ends, slice the tips off the banana. Place the banana on top of the peanut butter on one side of the tortilla. Wrap the tortilla around the banana, tightly rolling until the tortilla is fully wrapped around the banana.

Slice the banana into 8-9 sections to create the banana sushi. Serve immediately or pack in a lunchbox with an ice pack.
