    Orange Chia Pudding with Collagen

    Orange Chia Pudding with Collagen

    There's something so nostalgic about creamsicles. Creamsicle flavors are nostalgic of childhood, grandparents, and hot summer days with sticky treats from an ice cream truck dripping down your arm.

    While this chia pudding channels the bright orange flavors and creaminess of a creamsicle, it's definitely a significantly healthier alternative!

    A Balanced On-the-Go Breakfast

    I created this creamsicle orange pudding to be a balanced on-the-go breakfast option. I needed something that could be quickly grabbed by anyone in my family for a breakfast that required no thought but provided plenty of thought-out nourishment. And this has it covered:

    • Fiber: chia seeds, whole orange
    • Fats: chia seeds, coconut milk
    • Protein: collagen peptides, chia seeds
    • Flavor: fresh orange, orange zest, smooth vanilla, and coconut

    How to Make Orange Chia Pudding

    To make this orange chia seed pudding, combine all the ingredients except chia seeds in a blender. Blend until smooth. Then in a large glass bowl, stir together the liquid mixture with the chia seeds. Cover and refrigerate overnight (or at least four hours) until mixture has thickened.

    I chose to not add any additional sweetener, as I find added sugar can sneak in throughout the day and quickly add up. Plus the vanilla and coconut milk add sweet notes without adding sugar. That said, I'm all about you doing what works for you, so feel free to add a touch of honey or stevia to enhance the sweetness, should you so choose.

    What's Collagen?

    Collagen is the most abundant protein in your body. In this recipe I used unflavored bovine collagen peptides (affiliate link) to increase health benefits and protein content of this recipe.     One perk of using collagen in this orange chia pudding recipe is that vitamin C is important to consume with the amino acids in collagen peptides, as the vitamin C helps support our bodies' natural collagen production and repair. The vitamin C-rich oranges pair perfectly for taste and nutrition in this recipe!

    Also to note, I use Vital Proteins collagen. In my opinion, it's the highest quality and they take incredible care and go to great lengths to ensure a quality product, test for safety, and are completely transparent about their process!

    Ingredients

    • 3 small oranges
    • ¾ cup coconut milk
    • ¾ teaspoon orange zest
    • 1.5 teaspoon vanilla extract
    • 6 scoops unflavored collagen peptides
    • 6 tablespoon chia seeds
    US Customary - Metric

    Instructions

    • Peel oranges. Add oranges, coconut milk, orange zest, vanilla, and collagen to a blender. Blend on high for 1-2 minutes, or until a smooth consistency.
    • Pour the blended liquid in a large bowl and add chia seeds. Stir to combine. Cover and refrigerate at least four hours or overnight so mixture can thicken.
    • Stir prior to serving and enjoy!

    Collagen peptides used and recommended are Vital Proteins Collagen Peptides.
    Coconut milk used is full fat canned coconut milk.
