Ingredient Notes & Substitutions

- Chicken – I used chicken breasts in the recipe, but you can use whichever cut you prefer. You can also substitute any leftover grilled or roasted chicken, rotisserie chicken, etc.
- Bacon – Use your favorite type, even turkey bacon is fine!
- Lettuce – I use romaine, as I feel it’s a nutrient-dense option that’s reminiscent of a BLT, but you can use whatever greens you prefer.
- Tomato – I used halved grape tomatoes, but you can use cherry tomatoes, diced roma tomatoes, etc.
- Cucumber – Obviously not included in a typical BLT sandwich, but I love the texture and crispness that cucumbers add to salads.
- Garbanzo Beans – adds another layer of texture, plus a fantastic boost of fiber and complex carbs!
- Avocado Ranch Lime Dressing – My healthier, higher protein take on Chick-fil-a’s avocado ranch lime dressing pairs perfectly with this salad! Gives BLAT vibes.

It’s a simple salad – place your lettuce in the bottom of a large dinner bowl, then top with the remaining ingredients and dressing!
Tips and Variations
- Sub your favorite protein – salmon is another personal favorite variation here!
- Spice it up – add a drizzle of sriracha along with the dressing on top.
- Use crunchy chickpeas for a crouton vibe.
How to Meal Prep This Salad
I highly recommend meal prepping this salad in the form of a salad in a jar. Just like pictured above, pour the dressing in the bottom, then follow by firmer ingredients that will handle being stored in the dressing (like the chicken or chickpeas), followed by the bacon, other vegetables, and finally fill the rest with lettuce.
I like to use these 24 ounce glass jars for my salads in a jars!

Ingredients
- 2 cups romaine lettuce chopped
- 4 ounces grilled chicken breast
- 2 slices bacon cooked, chopped
- ½ cup grape tomatoes halved
- ½ cup cucumber chopped
- ¼ cup garbanzo beans drained, rinsed
