- Chicken – you need 2 pounds of boneless, skinless chicken breasts
- Seasonings – I give a specific list of individual seasonings in the recipe card, but you can also sub taco seasoning if you prefer.
- Salsa – any salsa you like, you’ll need a 16 ounce jar.
- Lime – I love squeezing the juice of 1 lime over the chicken after it’s cooked for a bright, fresh flavor addition.

- Add chicken, seasoning, and salsa to slow cooker.
- Cook on high for 2-3 hours or low 3-4.
- Shred chicken, add lime juice, stir.
Tips and Variations
- Salsa Verde – switch up your salsa for a green salsa chicken!
- Peach Salsa Chicken – if you love a little hint of sweet in savory meals, use peach salsa, it’s so good!
- Sub Taco Seasoning – want an even easier hack? Instead of using all the individual seasonings I listed in the recipe, just use 2 tablespoons of taco seasoning.

Meal Prep: Storing & Reheating
I’m a reformed meal prep hater, and salsa chicken was one of the first make ahead foods I ever started enjoying!
- Store in an airtight container and keep in the fridge for up to 3 days.
- Freeze, also in an airtight container, for up to one month.
- Reheat in the microwave for 1-2 minutes per serving, or in a skillet on the stove (you may need to add a 1-2 tablespoons of water so it doesn’t dry out over the direct heat).

Slow Cooker Salsa Chicken
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- 16 ounces salsa
- juice of 1 lime
Instructions
- Add chicken to your slow cooker, then top with seasoning and salsa. Toss the chicken so that it's coated on both sides. Cover the slow cooker.2 pounds boneless, skinless chicken breasts, 2 teaspoons chili powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon dried oregano, 16 ounces salsa
- Cook on high or 2-3 hours or on low for 3-4 hours. The chicken should reach 165°F when it's done.
- Shred chicken in the salsa. Squeeze the lime juice over the shredded chicken and give one less stir to combine. Serve immediately (or store!) and enjoy!juice of 1 lime
