Weekly Meal Prep | July 13th

Mom and mini meal preps are back this week with a super simple prep restocking a few of our staples (hello, freezer whole wheat sunbutter and jelly sandwiches, and hard boiled eggs!) as well as making a delicious high protein lunch staple for me. And snacks! Because are the kids even home for the summer if no snacks are involved?

Here’s what’s on deck for this week:

  1. BREAKFAST: French Toast Muffins (pairing with a protein source, like Greek yogurt, hard boiled eggs, or a protein shake)
  2. LUNCH: Poppy Seed Chicken Salad
  3. SNACK/ SWEET TREAT: Peanut Butter Yogurt Dip with Apple Slices (pro tip — soak the apple slices in 1/2 tsp salt per 2 cups water for 10 minutes, then rinse. They won’t brown!)
