  • Italian Sausage: I used a leaner turkey Italian sausage, but you can absolutely use pork if that’s what you have or prefer (just know protein content may vary based on the sausage type you choose).
  • Baby Potatoes: I love the buttery texture of baby gold potatoes, so that’s what I use and recommend! I also recommend not just halving, but quartering them, so they can get nice and roasted and cook for the same time as the other ingredients.
  • Broccoli: Fresh broccoli is our fiber-packed veggie of choice, but you can certainly sub other vegetables like bell peppers, zucchini, mushrooms, asparagus, or brussels sprouts.
  • Avocado Oil: Avocado oil is a heart healthy oil that has a higher smoke point, making it a great option for high heat roasting, like in this recipe.
  • Seasonings: Our three main ingredients are tossed in oil and salt, pepper, garlic powder, onion powder, and smoked paprika to elevate their flavor as they roast, before adding the sauce.
  • Honey Mustard: All you need is honey and whole grain dijon mustard to make this simple, delicious honey mustard sauce.

How to Make Honey Mustard Sausages

Slice diagonal slits along the top and bottom of the sausages, without slicing all the way through. Place on a sheet pan with broccoli, potatoes, and toss with oil and seasonings. Roast for 15 minutes.

Meanwhile, whisk together the honey and whole grain mustard. After the first 15 minutes of roasting, pour the sauce over sausages and vegetables and toss to combine. Return to the oven to roast another 10-15 minutes, until sausages are cooked through and potatoes and broccoli are tender.

Tips and Variations

  • For a leaner/ higher protein option, look for a lean turkey or chicken sausage.
  • Quarter the baby potatoes, or use small pieces of potatoes to ensure they’ll cook for the same time as the sausages and broccoli. If you prefer larger pieces of potato, cook them first, then add the sausages and broccoli when they’re about halfway done.
  • Feel free to substitute or add other vegetables! Brussels sprouts and zucchini are great subs, and peppers and mushrooms are great additions!
  • Want it really saucy? Double the sauce and serve some on the side as a dipping sauce!

Meal Prep: Storing & Reheating

To meal prep these honey mustard sausages, simply package in airtight containers, then store in the fridge for up to three days.

To reheat, microwave on high for 2 to 3 minutes, until warmed through. (Exact timing will vary based on your microwave.) I personally like to slice the sausage before reheating, as I find it helps it reheat faster.

Ingredients

  • 1 pound Italian sausage links
  • 1 pound broccoli chopped
  • 1 pound baby gold potatoes quartered
  • 2 tablespoons avocado oil
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • 2 tablespoons honey
  • 2 tablespoons whole grain dijon mustard

Instructions

  • Preheat oven to 450°F and set aside a sheet pan.
  • Take the sausage links and lightly, diagonally score them tops and bottoms. Place on the sheet pan, along with chopped potatoes and broccoli. Add oil and seasonings and gently toss until everything is evenly seasoned. Spread into an even layer, without anything overlapping.

  • Place sheet pan in the oven and bake for 15 minutes. Meanwhile, add honey and mustard to a small bowl and stir to combine.
