This Asparagus and Ham Quiche is a delightful spring quiche that’s ideal for a spring or Easter brunch. It’s even delicious for a light supper! Plus, this ham asparagus quiche is simple to make and in ingredients, including one higher protein swap that no one will ever suspect.

  • Higher protein – while this isn’t the highest protein recipe, I do have one ingredient swap that cuts down the calories and saturated fat while increasing the protein.

  • Eggs – you need six large eggs to make this quiche.
  • Cottage Cheese – many quiche recipes call for cream, but I skip the cream and use cottage cheese instead for a lighter and higher protein swap.
  • Gruyere Cheese – I adore the flavor of Gruyere with asparagus and ham! It gets blended into the egg mixture for a creamy, flavorful addition.
  • Ham – diced, cooked ham
  • Asparagus – chop into one-inch, bite-size pieces. No need to pre-cook, though!
  • Seasonings – add a little flavor to the egg mixture with salt, pepper, and garlic powder.

Add the eggs, cottage cheese, gruyere cheese, and seasonings to a blender and blend until smooth.

Add the asparagus and ham to a pie crust, then pour the egg mixture on top. Bake until set, then serve and enjoy.

Tips and Variations

  • Bake until set, which means until it’s no longer jiggly in the center.
  • If the crusts are getting too brown, you can lightly cover the quiche with foil.
  • Add more veg – huge fan of plants around here! Diced spinach, kale, mushrooms, and bell pepper are all delicious here, too.
  • Go crustless – skip the crust for a lower carb and lighter option, plus it’ll bake up in less time (start at 30 minutes!)
  • Gluten-Free – go crustless as mentioned above, or use your favorite gluten-free pie crust (ready made or homemade, your choice!)

How to Reheat Quiche

  • Oven: cover the edges of the quiche with foil to prevent them from burning, then reheat a whole quiche at 350 for 25-30 minutes or a slice for 10-15 minutes.
  • Air Fryer: Set to 350 and reheat a slice for 4-5 minutes.
  • Microwave: use medium power (50%) to heat for 1-2 minutes, heating just one slice at a time. Note that this is the fastest reheating method, but the crust ends up softer after reheating in the microwave.

Ingredients

  • 6 eggs
  • ½ cup cottage cheese
  • ½ cup Gruyere cheese, grated
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup asparagus, chopped
  • 1 cup diced ham
  • 1 deep dish pie crust

Instructions

  • Preheat oven to 375°F. If you're making a pie crust from scratch, go ahead and do so now.
  • Add chopped asparagus and ham to the pie crust and set aside.

  • To a blender, add eggs, cottage cheese, shredded cheese, and seasonings. Blend until smooth.
    6 eggs, 1/2 cup cottage cheese, 1/2 cup Gruyere cheese, grated, 1/4 teaspoon garlic powder, 1/4 teaspoon salt, 1/4 teaspoon black pepper
  • Gently pour the egg mixture into the pie crust, over the ham and asparagus. Bake the quiche for 40-45 minutes, or until the center is set. (Note that it may be easier to transfer in/ out of the oven, and any spillage may be caught if the quiche is placed on a sheet pan for baking.)
  • Once done, let cool a few minutes before slicing. Then slice, serve, and enjoy!
