- Tortilla – I prefer to use a high fiber or whole grain tortilla.
- Deli Turkey – deli turkey works best for this recipe. Aim to use a reduced sodium option and/ or one made without added nitrites or nitrates.
- Cheese – provolone cheese is the favorite in my house for these roll ups, but you can use any cheese you prefer!
- Lettuce – butter lettuce has the best texture and such a mild flavor, so I love to use it in roll ups! You can also use baby spinach, iceberg lettuce, romaine lettuce, or skip entirely.
- Cucumber – thinly sliced cucumber adds a light crunch, but feel free to substitute your favorite vegetables, or even pickles!

Lay the tortilla flat on a cutting board. Layer on the sliced cheese, sliced turkey, cucumber slices, and lettuce. Tightly roll the tortilla up, then slice into one-inch sections to create the pinwheels.
Tips and Variations
- Change up the tortilla. Use a plain, high fiber, whole grain, spinach and herb tortilla, gluten-free — whatever you prefer!
- Add more vegetables. You can add some shredded carrots, thinly sliced tomato, thinly sliced red onion, and more.
- Add a spread or a dipping sauce. You can spread a thin layer of mayonnaise, sauce, or even a spreadable cheese. Alternatively, add a dip! I love to dip these into my cottage cheese ranch dip for some added flavor and more protein.
Meal Prep & Storage
These turkey and cheese pinwheel roll ups actually store surprisingly well for meal prep! Because there’s no spread/ sauce on the tortillas, it helps them last longer. Made as is they can last in the fridge for up to two days. If you’d like to store for longer, leave the cucumbers out!
Store cheese and turkey roll ups in an airtight container in the fridge.

Turkey and Cheese Roll Ups
Ingredients
- 1 tortilla high fiber
- 1 ounce provolone cheese thinly sliced
- 2 ounces deli turkey
- ¼ cup cucumber thinly sliced
- 3 leaves butter lettuce
Instructions
- Place tortilla on a flat surface, then layer with cheese, turkey, cucumber slices, and butter lettuce.1 tortilla, 1 ounce provolone cheese, 2 ounces deli turkey, 1/4 cup cucumber, 3 leaves butter lettuce
- Starting from one edge, tightly roll up the tortilla into a log shape.
- Using a sharp knife, slice the rolled tortilla into one-inch thick slices.
- Serve and enjoy!
