Spooky nachos are such a fun, festive way to enjoy a Halloween dinner. They’re simple, easy and quick to make, and are (typically) a meal enjoyed by the whole family.

Plus, it’s easy to customize. You can easily swap out meats, cheeses, beans, and any other toppings you prefer.

  • Ground Meat: I prefer lean ground turkey, but you can use your choice
  • Taco Seasoning: a simple way to season the meat
  • Tortilla Chips: I found festive black and orange tortilla chips at Target, but use what you have/ can find.
  • Beans: black beans add fiber and a little more protein to this meal.
  • Cheese: shredded Mexican cheese blend provides all the cheesy deliciousness and holds the nachos together!
  • Black Olives: essential for creating the spiders on these nachos!
  • Greek Yogurt: plain, nonfat Greek yogurt is used to pipe ghost shapes on top of the cooked nachos.
  • Toppings: diced avocado and cilantro add flavor and some colorful green.

  1. Place tortilla chips on a lined sheet pan and top with half the cheese.
  2. Layer on ground meat and black beans.
  3. Add remaining cheese.
  4. Use black olives to create spider shapes, then bake until cheese is melted.
  5. Pipe Greek yogurt onto the cooked nachos in the shape of a ghost, then add black olive pieces for eyeballs.
  6. Garnish with avocado and cilantro, then enjoy!

Expert Tips

  • Follow the package instructions on your taco seasoning – most require 2/3 cup water, but some add 3/4 cup.
  • Using a sandwich or quart-sized resealable bag with a corner snipped off is a simple way to pipe the ghosts (with easy clean up!)

Substitutions & Variations

  • I used seasonal, Halloween black and orange chips from Target, but you can find a variety of Halloween-themed tortilla chips in most stores this time of year.
  • Use whatever type of ground meat you prefer (chicken, beef, pork, turkey) – or use all beans for a plant-based option.
  • To make dairy-free, use a plant-based cheese alternative that melts.
  • Use any toppings you prefer (you could use guacamole instead of avocado, or serve with or on top of shredded lettuce, pico de gallo, etc.)

Equipment

Ingredients

  • 1 pound lean ground turkey
  • 1 packet taco seasoning
  • cup water
  • 8 ounces black and orange tortilla chips or other tortilla chips
  • ½ cup black beans drained, rinsed
  • 16 ounces Mexican blend shredded cheese
  • ½ cup black olives
  • ½ cup Greek yogurt nonfat, plain
  • ½ avocado diced
  • 1 tablespoon chopped cilantro

Instructions

  • Preheat oven to 400°F and line a sheet pan with aluminum foil or parchment paper.
  • Heat a skillet over medium-high heat and brown the ground turkey. Add the taco seasoning packet and water and simmer for 2-3 minutes (or follow the taco seasoning packet directions, if different).
    1 pound lean ground turkey, 1 packet taco seasoning, 2/3 cup water
  • Spread tortilla chips out on the sheet pan. Layer half the cheese on top of the chips, then top with seasoned ground turkey, black beans, and the rest of the cheese.
    8 ounces black and orange tortilla chips, 1/2 cup black beans, 16 ounces Mexican blend shredded cheese
  • Create the black olive "spiders" on top of the cheese. To do so, slice one black olive in half length-wise for the spider body. Then, slice thin half moons to create the spider legs. Lay the spider legs, slightly overlapping each other, with four on each side of the black olive spider body.
    1/2 cup black olives
  • Bake at 400°F for 4-6 minutes until cheese is melted.
  • Place Greek yogurt in a sandwich-sized bag, then snip the corner off one end of the bag. When the nachos are out of the oven, pipe ghost shapes with the Greek yogurt on top. Use tiny pieces of black olives to mark the ghosts' eyes.
    1/2 cup Greek yogurt
  • Garnish with diced avocado and cilantro. Then serve and enjoy.
