Coconut cauliflower rice is a simple, delicious side that will become a versatile, healthy dinner recipe staple! free from: gluten, dairy, soy, egg, fish, shellfish, peanuts, tree nuts (does contain coconut)
Heat a skillet over medium heat. Add frozen cauliflower and cook 5 minutes, stirring occasionally, until thawed and heated through.
Add coconut oil and coconut milk. Stirring occasionally, cook another 5 minutes.
Add a pinch of salt to taste (some frozen riced cauliflower contains salt already added, so taste and add seasoning if needed).
Notes
Fresh riced cauliflower can be used. Saute fresh cauliflower in coconut oil until cooked and tender,then add coconut milk and cook several minutes longer.
