Cook the meatballs - if making your own, mix ground turkey, breadcrumbs, egg, and seasonings, roll into 1 to 1½ inch balls, and bake at 375°F for 14-16 minutes until cooked through. Using frozen or pre-made meatballs? Heat according to the package instructions.
Make the quick Greek salad - toss chopped cucumber, halved grape tomatoes, and red onion with olive oil, red wine vinegar, oregano, salt, and pepper while the meatballs cook.
1 large English cucumber, 10 ounces grape tomatoes, 1/4 cup red onion, 1 tablespoon extra virgin olive oil, 1 tablespoon red wine vinegar, 1/2 teaspoon oregano, salt and black pepper to taste
Warm the rice and chickpeas - heat cooked rice and drained garbanzo beans together, either on the stovetop or in the microwave.
2 cup cooked rice, 2 cup garbanzo beans
Assemble the bowls - divide rice and chickpeas between bowls, then top with meatballs and the Greek salad.
Finish it off - add a generous spoonful of tzatziki, then finish with feta and parsley if using. Serve and enjoy!
1 cup tzatziki, feta cheese, parsley
Notes
Short on time? Sub 1 pound of frozen/ pre-made turkey meatballs, reheating according to package directions. (I love to make a double or triple batch of my easy turkey meatballs to have on hand for easy dinner recipes like this!)
