Slice each date halfway, length-wise, and carefully remove the pit. Squeeze the bottom/ uncut portion into the bottom pointed tip of the heart and shape the rest of the date into a heart shape.
Fill the date with a small amount of chocolate nut butter, making sure it still resembles a heart shape. Place onto a parchment paper lined quarter sheet pan or plate and set aside.
To a small, microwave safe bowl, add the chocolate chips and coconut oil. Microwave for one minute, then stir, then microwave another 30 seconds and stir again. If needed, microwave an additional 10-15 seconds at a time, stirring well between each time, until chocolate is melted.
Place each date, one at a time, into the melted chocolate, coating it fully. Use a fork to lift the date out of the chocolate and gently shake off the excess chocolate. Return to the parchment paper lined pan. Once all dates are coated, you can drizzle any remaining chocolate on top, or sprinkle flaky sea salt or sprinkles.
Refrigerate 20 minutes, or until set. Enjoy, and store leftovers in the refrigerator.
