Ingredients

  • 12 eggs
  • 1 cup nonfat, plain greek yogurt
  • 1 lb lean turkey sausage
  • 1 medium potato with all excess moisture squeezed out (about 2 cups shredded)
  • 1 pint grape tomatoes chopped
  • 8 oz baby mushrooms sliced
  • 10 oz frozen spinach thawed and drained with all excess moisture squeezed out
  • 1 tsp dried ground sage
  • 1/2 tsp ground thyme
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350 degrees. Prepare baking dish by spraying with an olive oil or avocado spray.

  2. Saute turkey sausage in a large saute pan over medium-high heat until browned. 

  3. Add shredded potato and saute an additional few minutes until potato is softer.

  4. Add tomatoes, mushrooms, spinach, and spices and saute until cooked through, about another 5-7 minutes.

  5. While vegetables are cooking, whisk together eggs and greek yogurt in a large bowl. When done, add in cooked sausage and vegetable mixture, stirring quickly.

  6. Pour egg mixture into prepared pan and top with shredded cheese.

  7. Bake for 45-60 minutes, or until a toothpick inserted in the center of the egg bake comes out clean.

  8. Let cool several minutes then enjoy!
