Break up ground turkey in a large skillet over medium-high heat. Once browned, add taco seasoning (and water, if the taco seasoning package instructions say to!) and stir. Once fully cooked, remove from heat and let cool for 10 minutes before assembling.
Meanwhile, add all salad dressing ingredients to a blender and blend until smooth.
1/2 cup Greek yogurt, 1/2 cup salsa, 1/2 lime, juice only, 2 tablespoons cilantro leaves, 1/4 teapsoon ground cumin, 1/4 teaspoon chili powder, 1/4 teaspoon kosher salt
Assemble salad jars by first adding dressing to the bottom, then the taco turkey, then bell onion, peppers, black beans, tomatoes, romaine, and cilantro. Add the shredded cheese and tortilla strip toppings to a separate container.
1 cup black beans, 2 cups grape tomatoes, 2 bell peppers, 1/4 cup red onion, 8 cups romaine lettuce, 1/4 cup cilantro, 1/2 cup shredded cheese, 1/2 cup tortilla strips
Refrigerate until serving. When ready to eat, dump the salad jar into a large bowl, stir to incorporate dressing evenly, then add toppings and enjoy!
