Ingredients

red onion

apple cider vinegar

kosher salt
Instructions
Add sliced onions to a pint jar.
1 medium red onion
In a microwave-safe measuring cup, combine the vinegar, water, honey, and salt.
1/2 cup apple cider vinegar,
1/2 cup water,
1 tablespoon honey,
1.5 teaspoons kosher salt
Microwave 60-90 seconds, until hot and the honey and salt dissolve. Stir briefly.
Pour the brine over the onions, pressing them down so they're fully submerged.
Let cool 20-30 minutes before using, or refrigerate for later.
Notes
Sweetener swap:
Granulated sugar works in place of honey, same amount.
Vinegar options:
Distilled white vinegar or a 50/50 blend with apple cider vinegar both work well.
Storage:
Refrigerate in a sealed jar for up to 2 weeks. Keep onions submerged in the brine.
