Preheat. Preheat oven to 350°F and line two sheet pans with parchment paper.
Mix wet ingredients: In a large mixing bowl or a stand mixer, add the softened butter, brown sugar, and white sugar. Beat until mixed together and creamy. Add in the peanut butter, egg, and vanilla and mix until creamy and smooth.
1/2 cup salted butter, 3/4 cup light brown sugar, 1/4 cup granulated sugar, 3/4 cup creamy peanut butter, 1 large egg, 1 teaspoon vanilla extract
Add dry ingredients: Mix the dry ingredients into the wet until everything comes together. Don't over mix.
1 1/4 cup white whole wheat flour*, 1/2 teaspoon baking soda
Bake: Use a small cookie scoop to scoop the cookie dough, then roll into balls and coat with additional granulated sugar. Place the cookie dough balls on the prepared cookie sheets, about two inches apart. Bake for 9-11 minutes -- cookies will not spread, will rise a little, and will look dry but still lightly doughy when done.
Add peanut butter cups: As soon as cookies are done, remove them from the oven and gently press a miniature peanut butter cup or mini peanut butter cup tree into the center of the cookie..
