Cook pasta according to package directions, then drain and set aside. Let cool at least 10 minutes prior to adding to the pasta salad.

To a large bowl, add all dressing ingredients, then whisk to combine.

To the dressing, add pasta, chicken, black beans, corn, and cotija cheese. Gently stir together until all ingredients are evenly dispersed and coated in the sauce.
12 ounces corn, 8 ounces cooked chicken breast, 1 can black beans, 1/2 cup cotija cheese
Garnish as desired, and serve. If meal prepping, store in individual airtight containers in the fridge for up to 3-4 days. Enjoy!
