Bring a large pot of salted water to a boil. Cook orzo according to package directions. When it's al dente, drain the orzo and let it cool.
1 cup orzo
To a large bowl, add cooled orzo, chopped cucumber, feta, parsley, oil, lemon juice and zest. Stir to combine. Taste and adjust salt and pepper to taste.
2 cups cucumber, 1/2 cup feta cheese, 1/4 cup parsley, 2 tablespoon extra virgin olive oil, 1/2 lemon, salt and pepper to taste
Serve immediately, or store in the refrigerator until ready to serve. Enjoy!
