Ingredients
3
cups
chopped boneless, skinless chicken breast
(rotisserie is great)
½
cup
sweetened dried cranberries
2
celery stalks
diced
¼
cup
sliced almonds
½
cup
Greek yogurt
plain
2
tablespoons
light mayo
2
teaspoons
Dijon mustard
1
teaspoon
honey
pinch
kosher salt
pinch
ground black pepper
Instructions
To a large bowl, add all of the dressing ingredients, then stir to combine.
1/2 cup Greek yogurt,
2 tablespoons light mayo,
2 teaspoons Dijon mustard,
1 teaspoon honey,
pinch kosher salt,
pinch ground black pepper
In this same bowl, add all remaining ingredients and stir until everything is evenly combined.
3 cups chopped boneless, skinless chicken breast,
1/2 cup sweetened dried cranberries,
2 celery stalks,
1/4 cup sliced almonds
Serve immediately, or transfer to a closed, airtight container and store in the fridge for up to 4 days. Enjoy!
