Bring salted water to a boil and prepare pasta according to package directions. Once done, drain and rinse under cold water until pasta is at room temperature.

While the pasta is boiling, whisk all the dressing ingredients together then set aside.
1/4 cup red wine vinegar, 2 tablespoons extra virgin olive oil, juice of 1 lime, 1 tablespoon Dijon mustard, 1 tablespoon honey, 1/2 teaspoon smoked paprika, 1/2 teaspoon ground cumin, 1/2 teaspoon garlic powder, 1/2 teaspon onion powder, salt and pepper to taste
To a very large bowl, add pasta, chicken, beans, and all vegetables. Top with cilantro and pour dressing on top. Toss until the dressing has evenly coated all ingredients.
3 cups chicken breast, 15.25 ounce can black beans, 15.5 ounce can black eyed peas, 1 cup corn kernels, 10 ounces grape tomatoes, 1 red bell pepper, 1/3 cup red onion, 1 jalapeno, 1/2 cup cilantro
You can serve immediately, but I recommend chilling for a couple hours to let flavors develop a bit. Enjoy!
