Instructions
Bring a large pot of salted water to a boil. Cook the pasta al dente according to the package's instructions (time will vary based on pasta type and shape). Reserve one cup of pasta water, then drain and return pasta to the pot.
8 ounces pasta
To a blender, add the reserved pasta water, cottage cheese, tomato sauce, grated parmesan, and basil. Blend at least one minute, or until sauce is thick and creamy. Adjust seasoning to taste with salt and pepper.
1 cup tomato sauce, 1 cup cottage cheese, 1 cup reserved pasta water, 1/2 cup grated parmesan, kosher salt and pepper to taste, 1/4 cup fresh basil leaves
Pour the sauce over the drained pasta. Add the drained, thawed, chopped spinach (if using), then stir to combine and sauce has heated through.
2 cups frozen chopped spinach
Serve immediately, garnishing with additional grated parmesan and fresh basil. Enjoy!
