Preheat: Preheat oven to 325°F and prepare your pie crust (or grab your store-bought pie crust!)
Mix: Melt butter and let cool for 10 minutes. Add the sugars, egg, and vanilla and stir until combined. Mix in the flour, then stir in the chocolate chips.
1/2 cup butter, 1/2 cup light brown sugar, 1/2 cup granulated sugar, 1/2 cup all purpose flour, 2 large eggs, 2 teaspoons vanilla bean paste, 1 cup semi-sweet chocolate chips
Bake: Pour batter into the unbaked pie crust, then bake at 325°F for 50-60 minutes on the center rack. The pie is done when it is golden brown and doesn't appear wet or jiggly in the center. (If it's browning too quickly in your oven, you can loosely tent it with foil.)
