Instructions
Preheat oven to 325°F and line a baking sheet pan with parchment paper.
To a large bowl, add all of the granola ingredients: oats, almond, flax, hemp hearts, brown sugar, olive oil, egg whites, vanilla, and salt. Stir until evenly combined.
3 cups old-fashioned oats, 1/2 cup slivered almonds, 1/4 cup ground flax seed, 1/4 cup hemp hearts, 1/2 cup light brown sugar, 1/4 cup extra virgin olive oil, 1/4 cup egg whites, 2 teaspoons vanilla extract, 1/4 teaspoon salt
Transfer granola to the prepared sheet pan. Spread the granola over the parchment into an even layer, then use a rubber spatula to firmly press the granola down and together (this helps ensure larger granola clusters).
Bake for 20-25 minutes, rotating the sheet pan after 10 minutes to promote more even baking. Do not stir the granola as it bake - this will prevent large granola clusters. The granola is done when the edges have started to lightly brown.
Once the granola is out of the oven, let it sit (don't stir!) and cool completely. The granola will continue to harden as it cools.
Once granola has cooled, place the cream cheese baking chips or white chocolate baking chips with the coconut oil in a small microwave-safe container. Microwave them for 30 seconds at a time, stirring in between, until the baking chips have smoothly melted.
